I have 8 cakes that still have taken a few days to pin, finally there are pins on 6 of them!

Hm...seems like we started at the same time man. I had two invitro pins that fruited within the first 2 days, but had to wait another 6-7 days or so to even see any pins. Within 3 days of showing pins the things are growing like crazy. Mist/fan 4-5 times a day.
Edit: I did have 1 cake that was just really fucking soggy. The other cakes would shimmer a bit and then dry up as much as they are supposed to while this one was wet as hell...all the time. Any ideas what this was?

Do you see knotting? What pinning triggers are in effect?
I was recently going through this the first time, anxiously waiting for pins and pretty much I just followed chapter 9 from TMC and used it to check like... do I have high humidity, do I have lots of FAE, are the cakes getting water replenished and having tiny bits evaporate off? This thread reproduces this info in outline form, I know some of the TMC info is old but just taking it with a grain of salt (Stamets says lower RH to 85-92%... I kept mine at about 95-100% the whole time) it provided a sort of mental checklist for each stage so I could wrap my head around what was going on and relax and keep on fanning and misting.
It took five days from birthing to when I first spotted a tiny tiny pin amongst the knots and then another nine days before there was anything to pick. Temperatures indoors ranged from 69F to 75F.
It seems to me like it would probably be 5-12 days before any pin activity after a dunk.
If your cakes are drying out and you're having to re-dunk before the first flush goes, you probably need to water the cakes more. What sort of mister are you using?

Your misting sounds good. So does your fanning...
Do you have a good verm casing layer on the whole cake? You should barely see the mycelium. Good amount of indirect sunlight or 5000-6500k lightbulbs about 12-14 hours a day?
Dunked 24 hours at room temperature? Let the substrate consolidate for 7-9 days?
