you actually want your mushrooms to have very little blue.. because bluing is the result of psilocybin oxidizing.

Has this been proven yet? The last I had heard it was a hypothesis only. I read a paper a few years ago that showed a possible pathway for the psilocybin/psilocin to decompose into indigo blue, but they were not able to show that it is actually what is happening.
It is normal for the centers of the stems to be dark. This can also happen when the shrooms rot, so be careful. If the dark streaks are slimey, and if the shrooms smell like the inside of septic tank, then toss them. If they have a sickly sweet earthy smell, then they are fine.

What about gold flakes? I had some cubensis that contained these gold flakes all over the stems and caps, any idea what that could be? I must say, they were good .

Yea the gold flakes is just some leftover vermiculite (from the growing medium) that stuck to the mushroom fruit, it won't hurt you. The blue is not bad either, as people have said.
