I wanted to know which scales gravity has been tested on?

I know that we observe the effects of gravity described by traditional science on the scales of planets and suns. That is to say, objects are attracted to earth and earth is attracted to the sun, for example. The rate of attraction is consistent with newton's laws of gravity.

does general relativity play into this relationship much? does it offer different explanations of orbit speeds?

What is the largest system which abides by known laws when taking into account observable masses?

Why yes indeed, it does.  Back in the day, the orbit of Uranus just wasn't jiving with predictions.  Using classical theory, scientists were able to deduce that there must be another planet beyond Uranus that is influencing its orbit.  They calculated where it should be, asked astronomers to look there and voila! Neptune was discovered.  A triumph of Newton's theory.

Fast forward a bit, and scientists started noticing discrepancies in Mercury's orbit.  Its perihelion was advancing at a rate not predicted by Newton's theory.  Drawing on the previous success with Neptune, many started looking for another planet that would be influencing Mercury's orbit.  This planet would have to be between the sun and Mercury, and thus very hard to see.  It was dubbed 'Vulcan'.  But after searching and searching, they could not find such a planet.  Then when Einstein published his general theory it was applied to Mercury and viola!  The theory accurately predicts Mercury's perihelion.  A great feather in the cap of a new and crazy theory.

Im going to make an assumption here based on your previous posts about this.  You are singling out the electromagnetic field as the sole means of being 'observable'?

i guess you mean that patturns in the data are obviously all going to be recieved via electromagnetic radiation because thats what we use to view. However we dont tend to assume dark matter is there unless we have to. otherwise we would always have to be open to teh possibility that planets contain dark matter or other sorts of things, for example
