Air Drying

My pet prarie dog has been air drying his fruits(no fan) in a dark cabinet. Low RH in the dwelling seems to get them dry in about 2 days or so,then into a glass jar. Is he losing potency ?

Thanks for the advice. It's incredibly dry in there. He was storing in a glass cookie jar,with keyboard duster to push out the air. Just wondered if that couple days really made a difference. Sounds like it takes most people that long to dry even with a fan.

i don't think you would be losing potencty in 2 days.. seeing how it usually takes that if you fan dry them for 24 hours then put in a drying chamber..

I never air dry. I use a substance called Damp Rid. My dryer is simple. I have four plastic cups sitting at the bottom of a Rubbermaid tud with a lid. On top of the cups, I put a layer of aluminum foil and poked a few holes. Then, I put a substance called Damp Rid (buy it at a grocery store, it's like a de-icer) on the foil. I folded some chicken wire to make a shelf of the damp rid. Last, I covered the top of the tub with siran wrap and closed the lid. This works remarkably well and I spent about six dollars on the whole thing. No potency lost. Good luck!

i find fan drying for 12-24 hours than using dessicant (damp-rid) works best...

say that a person's mushrooms ARE blue all over from drying slowly, approximately how much less potent will the mushrooms be? noticably? or just very slightly?

Two days is fine. The thing to go for is the 'cracker dry' stage, where they are crisp and easily snapped. Fan drying can do this fine, but IMO the optimal way to go is to fan dry until 'mostly dry' then shift into '2nd gear' and suck the innards out quickly with desiccant [we anal bastards love this method]. One reason I like it is that the desiccant doesn't work as hard, stays dry, and can essentially last forever. Even as it just begins to glisten with moisture, it's drying power is greatly reduced as the surface area of the salt pellets is reduced [dry=rough, wet=smooth]. By only introducing mostly-dried fruits, you can also just lay them directly on the desiccant without fear of them dissolving and wicking up the salt [fresh fruits laid directly on CaCl get dark blue 'salt burns' and taste nasty. Not poisonous, but nasty]. Having to clean out wet CaCl is no fun either.

However, actual loss of potency by complete fan-drying is over-emphasized, IMO. There are many ways to do it well. I think you'll be pleased!

The bluing reaction is often over-emphasized as well. It is an *indicator* of oxidation, true. If a somewhat blue shroom is dried and sectioned, more often the interiors are still white. Surface bluing on its own is really only a small amount of the volume of total fruit tissue. If the whole thing is blue, though, it might be a less-potent critter.

that's exactly what i was thinking. the bluing reaction/potency is blown out of proportion.
