Interesting information Grobo, thanks for chiming in.
Oysters fetch a much lower price around my region, $10-12 at the grocery stores for terrible looking, over mature, aged, 1 day away from spoiling oysters. At the farmers markets you can expect to pay from $8-12 per lb and the quality is a little better but not all that spectacular.
I do agree with the sub par quality of gourmet and exotic mushrooms that are offered through grocery stores Canada wide.

People can and will only pay so much for food. When you start charging more than prime beef you are reaching that limit. You are also loosing a good bit of your customer base and limiting yourself to the wealthy consumers. I have no selling experience with mushrooms but I have a feeling there are a lot more mushrooms to be sold to the health conscious middle class than just those that can afford prime beef. Just my thoughts though. Nice looking shiitake GroboClone!

I agree with you trout, but why give away your product when you can get premium prices. I'm consistently selling out of all the mushrooms I can grow at the prices I listed.
I would love to be able to sell my mushroom at a price that everyone could afford. Some things to keep in mind though, to the average consumer, even the health conscious ones, mushrooms are mushrooms when it come to nutritional value. On that front It's impossible to compete with A. bisporus factories that can pump out 50 tons a week and sell them for $1/lb wholesale. That leaves you with customers who are interested in gourmet mushrooms for either their flavour/texture or nutraceutical value. I'm having the best response from gourmet stores and restaurants that focus on local produce.
