Are you asking what the best gun that shoots a .45ACP, or best brand, or bullet type?
All of the above, Springfield Armory 1911 with 230gr. JHPs.

A .38 or even a 9mm might be best for most people.

Well if you want the best 1911 there are lots of opinions. Springfield Armory, Chip McCormick; Para; STi; Nigthawk Custom; Dan Wesson; Wilson Combat; Les Baer; Ed Brown, are all excellent. Springfield Armory has very consistent quality and that is my personal favorite of them.
Kimber over recent times I've heard thir QC isn't what it used to be. The best deal to be had is definitely the Rock Island Armory 1911. It's a basic mil-spec 1911 but has proven reliable, accurate, and comes with a lifetime warranty that actually has a reputation for great customer service. It's a good starter for a 1911 since it's relatively cheap and isn't really losing value if you decide to sell it later and upgrade to a high-end like listed above.
I'm seeing it's your first gun. When you say self-defense in your OP, what do you mean? The 1911 is a large gun and it's next to impossible to fully conceal unless you're huge, so don't expect to be able to carry it with you if you plan on concealed carry. It wouldn't be out of place kept in a bedside table at night, or to carry in your vehicle with you assuming that's legal in your area.

The Commander and Officer's models aren't the most reliable for 1911s. Not sure I would want to shoot a round that powerful without the weight compensation of the full-size barrel. There are better options for compact guns IMO.

the Rock Island is excellent for the price which is very cheap, Springfield Armory makes a good one in the $700-$800 range, I have this little fucker made by Olympic Arms, it's in the same price range but it's by far the best I've ever shot for a production pistol. they're fairly hard to come by

if you'd like to build your own custom, let me know, you can get the $3000 custom for well under $1000

Prisoner - Might be a possibility. I'm moving in a few years. That money I'm counting on for a reliable, accurate .45. Everything else can be crap, as long as it goes bang/reliable and isn't GLOCK.(Nothing against glock I just don't like the square look and trigger safety. I do like the full auto though. I was looking at the kimbers but there quality has been crappy and not standard of Kimber reviews say. $950 is the most I'd spend.
Keep this thread going, should I change title?

In California, I can't have any magazine capacity that holds more than 11 rounds.. Ok if I PM you on what a guy suggested to me about making a gun more accurate for a 1911?

Just be aware that RIA 1911s use MIM internals and lots of people feel they are inferior for that reason. Read up on MIM and decide for yourself. MIM has come a long way and the parts can withstand more, but forged is still considered better overall. You can buy an RIA 1911 and upgrade the internals to forged if you like, they sell forged internal kits from many of the custom 1911 makers out there (Chip McCormick, Nighthawk, etc.). In fact the RIA is a great starting platform to build a custom, but the internal upgrade alone will also put you at about $600 for the gun when the resale is far below that. Probably not worth it. The 1911 has a loyal following so if you get the RIA 1911 you'll probably want to keep it as-is and upgrade to a nicer one later down the line to add to the collection. I say "collection" 'cause guns are a serious hobby that suck you in more than most.
Last thing is that 1911s all require at least 500 rounds to be fully broken-in. The gun won't be as accurate or reliable until you do this and some guns take way more than 500. Until you reach that point, the gun may not be reliable or accurate. RIA's own owner's manual states that you can't even request warranty work until the gun has been broken-in. 500+ rounds is expensive to get your gun where it needs to be in the first place so the owership cost of a 1911 is higher than you would think based on the MSRP of the pistol itself. You do NOT want to trust your life in the hands of a 1911 that hasn't been fully broken in either.
