Case stalled jars? (95%+)

This crazy bum came up to me today and asked me if he should just case his jars that have stalled at about 95% (probably dried substate?)...he said he gave them a chance (week+) and they didnt do much so now hes mad and just wants to case them...

I told him itd be alright because he could just scape off the left over BRF/verm then crumble n case the suckers...was i right?

Dont ask me, he was a crazzzzzzzzzzzy bum.

No dont case w/o them being done, it is possible to cut out portions of the uncolonized substrate, or use hot metal to brand the uncolonized portions, but this way increases the risk for contams.

There are a few posts and teks here to deal with the problem you have. Usually cakes do stall as they approach finalization . The bum can either take the tape of his jars, but keep covered with tin foil, or flip jars upside down. It is a common problem and suggest he just waits until they are done, and i kno how axxious he must be.

Tell him not to rush and ruin what he worked so hard for.

Are things meant to happen, or are we meant to make things happen?

Mysterious Dr. X had a problem with the bottom of his jars never finishing. He rubbed down a sharp knife with rubbing alcohol, and then just sliced off the bottom uncolonized part. The cake was a bit smaller, but when placed into a terrarium it fruited beautifully. Dr. X is one impatient cat.
