Presto pressure.

Just thought I would throw this out for you all using presto pressure cookers with the flat top bobble weight. I have been using a quarter on top of the weight to increase the pressure a bit. This brings the pressure up to 16 psi without loosing steam. It will begin to wobble and loose steam at around 17 psi and the quarter will fall off around 18 psi so you wont blow your relief valve. I would watch your cooker the first run to make sure that yours is the same. The reason I do this is that I can keep the pressure just slightly above 15psi for the whole 90 min and not have it drop below with slight temp adjustments. It also allows me to add very little water so I'm not up on my jars and still not have to worry about running dry. In a 90 min cook I see very little loss of water when I keep it around 16 psi. Enjoy!

You can just as easily turn the stove down and run it at 14 psi and get the same water savings. The extra temperature is negligible.
An AA with toggle valve can safely be operated at 20 psi. RR

I do not want to debate you RR I am just curious. So you say 14 psi is good enough, so what is the lowest psi for a 90 min grain jar sterilization that would be completely effective? I have always heard when people have sterility problems that "the pressure did not stay above 15 psi the whole time". I know a slight dip wouldn't really hurt but but keeping it lower the whole time seems to be against common practice. Would 14 psi require say 100-110 min for the same effect.

Nope. Use the same 90 minutes. Don't start the timer until pressure is reached. The difference between 14 psi and 16 psi isn't enough to matter.
I use 8 hours at 1 psi and get 100% success with grains and supplemented sawdust in 7 pound substrate bags. RR

Good info in this thread RR that is interesting about 14PSI, your probably right, but ive never tried it.
So we are talking 90min for grain in jars, what about sup sawdust? Would 2 6-7lb bags be ok with 90 min at 15PSI in a 23qt? Right now i do 120min for sup sawdust, but im looking to shorten the cycle. Im a little gunshy on trying the lower time as i h8 risking getting contams, but i will give it a try w/ oysters, because they start fruiting 7-10 days after inoc so i can know soon. I dont want to test it on shiitake, i would have 2 wait forever for results. But any advice on sterilization times is most apreciated.

Cool. I still like the extra wiggle room the quarter gives me but it is nice to know I have even more wiggle room down to 14 psi. That makes life even easier. The less I have too look at the pc the better. So RR are your AA automated enough you just turn them on and walk away? I would think daily baby sitting a pc would get very old. I am trying to get a schedule of 2 batches twice a month out of my 2 23qt presto's for my total output. This may increase though as I start working more with shiitake bags.
