Oops prepping casing mix prep..Fixable? Start over? Please advise.

I'm currently following the 50/50+ casing tek. I don't have a pressure cooker of my own yet, so I am following the directions the tek has for pasteurization. Last night I got distracted & forgot about it. Needless to say, it got left on a little longer than I'd meant. The tek says to keep the water at/around 150°-160° for around an hour. I left mine going for probably about 1hr &  40mins to 2hrs at 66°(+/-). Will this have  a affect the casing mix negatively or at all? Did I completely screw up or is it fixable? Can I salvage this batch or would it be best to simply start again with a fresh batch & fresh ingredients....any advice is greatly appreciated! thanks guys (& gals).

U tried to pasterize at 66F for 2 hours?

If its an under pasterization one that you didnt keep the temp hot enough for long enough you can re pasterize

It doesn't matter what temp the water is at, it matters what temp the center of the material is at and for how long.  You want the center of the casing mix to maintain 60C to 70C for 90 minutes.
