A couple quick questions about fruiting cakes...

I currently have my PF cakes in the fruiting chamber. They're doing fine so far, pinning started really taking off on a few of them today. On some cakes, they are sprouting out of the sides & top of the cake. A couple of the others, though, a most of the pins are on the underside of the cake. Should I flip those cakes over so the primordia are topside or can they be left this way to grow out from under it?
My second question is, after they're birthed, dunked, & rolled, should the verm side or the other side be placed facing up? Or does it matter? So I know for future reference...Thanks

1) Your choice. I usually flip the cake if there are pins on the underside. 2)It doesn't matter.
