Awesome thread!  I, too, have a charcoal grill and I love it. I just got it less than a year ago and just can't stop grillin. 

Beer can chicken is fantastic and if you brine it for 24 hours it's even better. 

I suggest using lump charcoal as opposed to briquettes, it seems to light a lot quicker and doesn't leave near as much ash.

I'll get some pics of my next session and add to the thread.

I just did up some lamb for the first time in years.  I marinated it in a splash of peppermint syrup for 2 hours then I rubbed it with garlic powder, pepper, oregano, and parsley.  I put it directly over the coals for 3 minutes then gave it a quarter turn for the grill marks, then cooked another few minutes, flipped, and repeated.  Then I moved it to indirect heat for another 5-6 minutes and out came the best fucking meat that's ever hit my tongue.  My cell phone pics don't do it justice, but I had a nice char around the exterior with a nice pink/red inside.  It was absolutely fantastic.

:getstoned:  Do it up; it came out excellent.  I gave it to a friend who cooks his steaks for 2 hours to ensure they're charred black all the way through AND my dad who thought it was steak...  When I said, "It's lamb" they both stopped, chewed some more, then gave me the thumbs up.

Hey Geo!  Just wanted to share my latest grilling using your foil technique.  This was a fat NY Strip steak that I did up last night... It came out being my best steak to date.  I couldn't've done it without you man!  :getstoned:

I'll have to try that.  We're seriously considering either building or throwing in on a smoker.  Beef brisket is my absolute favorite smoked meat.

I just wanted to share a steak cooking tip I just learned last night, and it worked out beautifully.  It may seem like common sense but when you marinade a steak for a couple of hours, do it on the kitchen counter, not in the fridge.  It cooks through a lot more evenly and gets a better sear when the steak goes on the grill at room temperature.

I know of several, and there are a few butchers here out in the burbs.  When I get some extra $ I need to get off my ass and go buy a bunch of meat from these guys.  I have yet to find a NY strip thicker than 1" at the supermarket.
