Add verm and some gypsum. Verm will help with holding water too. Post how the compost works out I'm curious
Also one brick of coir is almost enough sub for a 64 qt by itself (with Eco earth at least)

First of all, the bag will break up and fluff up to more then it looks. Then you'll have to add about 8 quarts of spawn. Still, I would mix in some verm and coir is perfectly acceptable too. And 3 inches is perfectly reasonable for a substrate, but I'm sure with just 25% or so verm and/or coir you'll be higher then that.
The compost works wonderfully, I've used many hundreds of pounds of it. Not much better then horse poo, but the consistency is great, no chunks like with poo.

Hold up! you use a mixer to break up the poo? how well does that work without kicking up all the poo dust in the air? I'm about to make up around a 100lbs of substrate, and hitting up the thiftstore is worth not having to break all that up by hand!!

I take my nuggets and put them in a clean pillow case then into a rubbermaid tub for regyhdration I roughly break them in half through the pillow case after theve softened up

Then I feild test squeeze the water out

Then into the blender bowl

just after the mix

I just threw these together quick because I just happen to be doing up horse manure last night and today,it gets even fluffier and a better consistency with coir and verm added

Although NOT necessary , the addition of Gypsum (@ 3-5% by volume of materials, dry) to any bulk substrate is beneficial which'll be noticed at fruiting time. AGRICULTURAL GRADE GYPSUM MAKES MYCE. STRONG LIKE MILK MAKES BONES STRONG IN HUMANS.
