What does salt specifically do to prevent bacteria?

If anything, lyse them due to the chemiosmotic gradient between the cytoplasm and the media.

Everyone knows that salt is a preservative. It somehow prevents biological growth as well. Sorry I can't be more specific, but a very good question none the less.

when you've got a semi-permeable membrane separating two solutions of water and salt (of different concentrations), the water will move through the membrane in such a way as to equalize the concentrations.

if one side has a higher concentration of salts, water will move from the other side through the membrane to that side.

in a very salty solution, much of the water in the bacteria leaves through this process of osmosis, and it dies.

(i think)

salt water would have a detrimental effect on mycelium as well.

I don't know although spraying salt on your casing doesn't sound like a good idea.
