you don't need to sterilize the perlite

When I did pf cakes I dunk and rolled.  If you want a detailed discussion on the merits of dunking and rolling, you can find threads with the search function where people much more experienced weigh in on the subject.

My first time I basically followed the mushroom videos to the letter.  Good luck.

Unless you want the cake to dry out, most-probably beyond the point of non-recovery, or fruit very poorly, at best, submerge cakes that have been CONSOLIDATING into water for 12-24 hours, then roll in verm. before placing the cakes into the FC.

The dunk serves as to re-hydrate the cakes (give the myce. a drink) after a long period of colonizing and consolidating in jars needed to carry out a good flush.  The "roll" serves as to keep a good micro-climate at the cakes surface as well as to aid in water retention of the actual cakes.

A measure to sterility you can take for the verm. is to bake the verm. in the oven for 30 minutes, in a pre-heated oven @ 350F, letting the verm. cool to room temps before you roll cakes in it.  The same measure to sterility can be followed with your perlite, if you so desire.
