That is blowing my mind that you can just skip the simmer.  Hmmm...

I totally believe it though simply given 90 min at 15 psi.  Nothing can really survive 250 F for 90 min. 

I also agree that busted berries is really not a big deal, especially with added gypsum.

Yes, this is why I like to do the simmer, the "steam dry".

The warmth of the grains really helps them dry.

I usually let my grains steam dry for about 3-5 min.  I find that pressure cooking them alone drys the exterior just enough so that they aren't wet once they come out.  My grains always look bloated, but dry on the outside.  This works especially well with my 15 psi 23 quart Presto; my little cheapo 10 pis 8 quart... not so much.

See, I have never had a problem with too little moisture in my grain jars. If you are worried about it you could just strain them a little less and leave them wetter when putting them in the PC. Example, my grain is usually sticking to each other and my hands because it is still very wet. When i fill my jars a little past the half way point, without a simmer or a half ass simmer, they expand and will fill up the jar almost to the top. So I think that's evidence enough that pcing causes them to expand and soak up the moister around them. So yeah simmering equals waste of time. Soak and strain and in the pc...I have even done it with plastic glad tall quart jars that lost moisture faster then you could believe...Still colonized fine and no simmer involved. Simmer= waste of time, and if your one of the people that don't believe endospores are a problem, you can skip the 24 hour soak as well, and just put some water and dry grain in a jar at the right ratio and pc it. The temp and pressure should do the rest...
