Pasteurization is for a lot more than just killing off the mold spores.  Proper pasteurization also 'cooks' the substrate, making it easier for the mycelium to digest.  Non heat-treated coir performs poorly.

The spent coffee grinds won't mold in the week to ten days it takes to colonize the substrate if you keep the CO2 level high enough during colonization. That means keeping foil over the tops of trays(and crimped around the edges) to keep them sealed.
