can you soak grains too long?
    #14725531 - 07/06/11 12:16 PM (13 years, 6 months ago)

I was planning on PC'ing today, but it looks like I will have to wait until tomorrow.  I began my grain soaking last night, which means that if I wait until tomorrow, I'd be looking at a 36 hour soaking of the rye berries.

could this be a problem?

Oh yes you can. ive gotten away with 36 hours but 48 seems far too long. this happens to me all the time, try for 36 and see if they smell funky. It will smell fermented but you should be able to distinguish the smell of mold or bacteria from the smell of fermented grains. Doesnt hurt to start all over and plan ahead. Good luck to you

Well, I Planned fine, the wife forgot to mention she invited some people over.  Small house, loud 15 psi weight rattling way too loud.

The issue isn't continants, right? Pc'ing takes care of all thing living, at 90min 15 psi, no? The issue is whether the rye turns to mush, at least that is what I am wondering.

Good to know that 36 hours is okay. Maybe I'll boil them off and dry them, put them in jars with lids for the night.

What I usually do is soak them for 24 hours then rinse them with lots of cold water then SIMMER them until they start to swell a bit then rinse with lots of cold water and let them sit for about 30 minutes to let them absorb as much water as possible then you can them and PC them for 90 minutes at 15 psi... let cool then inoculate.

When using rye berries: I use fresh pressed coffee and near boiling water (200+ degF), cover and soak for 12hrs... End up with about a 2.5:1 expansion and they are FULLY hydrated, that is for sure

You can soak too long I wouldn't go past 36 hours or your on your way to making a whiskey mash. The soak is mostly to germinate bacteria so it can be killed in the PCing process, most of the hydration of the rye berries takes place during the ten minute boil
