Pinning and not fully colonized. (jar pin gone wild)
    #14721788 - 07/05/11 05:50 PM (12 years, 8 months ago)

I just checked my cakes and the very bottom is lacking about a dime sized spot. And they are pinning. Should I dunk them with the pins or put them in the fc? I wonder if my cakes were too dry or something cause they took forever. I finally gave up on it fully colonizing when this little guy was knocking on the lid. Had to give him some air...lol

the rest of the substrate is unavailable for colonization

bacteria, or too dense.

either way, rinse off what you can and fruit

that tiny spot would take a day to colonize or you could just dunk and roll, its totally up to you. Most people on this forum are contam nazis but it is a good habit.

I purposely rub off any early pins when I rinse, before ducking

You want to rinse off the pins because they will try to "steal the show" so to speak and steal nutrients from the other areas. Pick off early jar pins and you'll have even pinsets and not sloppy contamed cakes.
