If you really want or need that much light in that GH then T5 will work fine as will T8's. The humidity will have no effect on the bulbs, just make sure any open spots where the wiring goes is water proof sealed obviously.

Don't over think it. Just make sure each tier gets a bit of light. I have one bulb per two shelves and I am more than satisfied. It's hard to describe exactly how it's setup, but I can tell you it's very jerry-rigged.

But I say never mind all that. Go to your nearest thrift store and get a couple of fixtures. Then go to the grocrey store and get an appropriate number of 6500K bulbs.
I wouldn't put anything in there at all really, let alone something that's not water proof. It's gonna get moist in there.

When I had my GHs up & running, I used a 4'x2 shop light w/ 6500K light bulbs in it.
It was on the exterior of the GH's (about 1 foot away) going from floor to ceiling vertically, rather than horizontally.

Top to bottom:
50 cfm fan @ 0 SP. 23 cfm @ .5 SP
Bubbler/tank stone @ 4" diameter
Ultrasonic fogger on a precision timer @ 6-8 minutes on & 60 minutes off.
Tubing picture:

I found I used too many connectors, which, in turn, reduced my air flow significantly. Thus, I caused too much Back Pressure.
I'm currently changing all my tubing to 1" w/ 2 connectors per. Always tweaking & fine tuning.
It never really stops. I love it.

That is freaking slick. All I do is ultra sonic, and it works but I'm looking to upgrade eventually.
Yeah I like fine tuning too, it makes me feel like an actual mycologist.
