Can only pressure cook at 10 psi

I can only get my all-american pressure cooker up to 12,5 psi, i would like to be able to simply pressure cook at 10 psi, it would be ok for jars, but i wonder what pressure cooking time would you recommend for 5 quart large spawn bags?

could you also tell me if you have any idea why i cannot reach 15 psi? i use an american pressure cooker on the stove, is the heat not enough? if i keep the heat up, the steam escape from the side of the cooker, but if i turn it down the pressure goes down as well. should i wait until 15 psi then put it down? or should i heat it up to 10 psi then put on medium? please help me.

I pc my bags stacked deep 2.25-2.5 hours at 15PSI

As you why your pressure cooker will not heat up all the way. Inspect your seal and make sure there are no cracks in it and it is still supple. If the seal is too old and dry it will not hold pressure well same as if you have a small crack or weak bit. Of course also make sure your PC is indeed rated to go to 15psi and that you are using the correct weight on top, this depends on model and should be explained in your manual. Some PC's other methods to control the psi but most use a weight on top.

Bad advice from people.
Get a new pc.  Your broken one is extremely dangerous. That steam escaping out the side means the metal is warped.
Do not use.
Possible explosive consequences, steam is dangerous as hell.

it's an all american pressure cooker. it is very new though, perhaps i broke it once while it burned without water. how could i be sure? it was quite an expansive purchase. replacing it will be hard. how do i make sure that it doesnt explode in my face? i really want to keep it.

If it is an all american, make sure you're greasing the "metal to metal" surface or there might be a small leak.  Petroleum jelly will do the trick.

Yes, that's exactly how it breaks.
You can be sure it's broken by the steam escaping out the side where it's supposed to seal.
Which means that the metal could potentially crack while under further stress.
Order a new ring seal from AA, if that doesn't fix it, get a new PC and don't ever apply heat when it's dry.

No AA PC in AA PC history utilizes a seal ring made of rubber.  AA PC's and steroclaves alike are sealed metal to metal (cast aluminum to cast aluminum).  Any PC that utilizes rubber as a means to seal is most likely Chinese (a presto). 

OP, I'm not sure what the heck is causing your AA PC to not keep pressure.  My guess is that you'r not making sure the lid to the unit is evenly lined up before you bolt down the lid.  If the highest psi you can reach is 10, I wouldn't PC 5 quart spawn bags for less then 6 hours until you diagnose and fix the problem, or get a new PC.

I have read in the manual that burning it dry will ruin the pc, and it did happen once since i have a hard time figuring out how to seal the pc with the wings. am i in grave danger if i use it at 10 psi?. i do twist the wings 2 at a time from an opposite side. but the first time i used the pressure cooker i didn't do that. and it burned dry. it shocks me because i have cooked 2 set of jars with it even if it was broken.

Have you greased?  Its not just a recommendation with these units, it's something you need to be doing especially in the first uses of the pc.  The metal will condition it's self over time.

I once forgot to put more water in my AA between runs, and ran it for a 2 hour cycle with 10 grain jars. They came out a little dry, and a little burnt, but I used the jars with no problem. Also, the PC still works. If steam is escaping from your pressure cooker on the side, you're sealing it wrong, period.

so what is the exact technique in order to seal it? i did grease it, but i didn't do it the first time, only the second time and on . there are some marks inside the cooker as in dark spots because of my failures.

I would like to know if i can still use it without the pc blowing up in my face, 10 psi is enough for me, but if i have to put it on for a longer time then does that mean i should put more water?

How much water do you exactly put in your pressure cooker? i had jars with foil on that sucked up the water mext to it because i put too much water, so i should aim in between. is it 2-3 inch?

The over pressure valve will explode out before your pc does.  It's safe to try it again, but if you're losing steam from any where but the weighted stopper... you have a problem.  Turn it off and try again at resealing.

He's not going to build enough pressure if he's losing through the metal seal.  He's going to dry out first.

If he leaves his troubled PC while he should be observing it, then ya he he might go dry and super heat the metal.

We're expecting you not to do this.

2 inches up the side of the jar should be fine for a PC not losing excess.  You'll also need to place something, like a rolled towel, on top of the metal stopper once it begins to hit the 10-15psi.  Wait for it to hit the temp you require then adjust your heat (down) to maintain a 15psi.

If you leave the stopper bobbling like mad at 15psi, it is likely you'll lose too much water.

when you've weighted down the stopper, take a listen around the seal for hissing, look for tiny bubbles.  If you're seeing hearing anything, you still have a problem.
