Counter top Roaster Question

I recently acquired a nesco roaster. I plan on using this for bulk pasteurization.
Most of the guides say to turn the roaster down after it heats up. My roaster does not go below 200 and if one attempts to set it lower than 200, it just doesn't heat up at all.
Will this be a problem?

For sure its a problem you need to maintain 140-160F for an hour for proper pasterization. With temps that high you are sterilizing

And ive seen dry heat isnt recommended! Return it or use it for food

The counter top roaster can be used for a hot water bath pasteurization. I am attempting to follow Agar's method with the Nesco roaster. His much older model does 150 at its lowest setting. All of the newer model nesco roasters have a minimum temperature of 200.
Has anyone had success using the newer model nesco roasters? I have figured out a method using a 15/15 timer once it gets up to temperature. I have been using RR's jar in pc method for years but wanted something a little more hands off.

If you had some electrical knowledge maybe you could change the thermostat or get an old one?

It would probably be easier to chase down an older model than find a suitable rheostat.

I believe your timer or an older model would be the way to go. You can do a hot water bath in the regular oven as well..or get yourself a hot plate and a trashcan.
