PH Buffering, sub PH, and water usage

I've been using coffee, sulphur, and hydrate lime to buffer my subs. Are there any better buffers available, like vinegar/tea or something different, or better than what I'm currently using. I've had luck so far, but what are the best mushroom substrate buffers in your opinion, thank you very much. I usually buffer my subs to around 6.5-6.7 for most substrates, any opinions on this as well. Thank you very much for your opinions/contributions.
My reverse osmosis water has an ion count of 13 and PH of 7.2 (due to lime). I've been using this water for everything, is this ok? The purified drinking water I also get has an ion count of 26. So, I've just been using my reverse osmosis water. All opinions are greatly welcomed. Thank you again.

Just a little bump here, wanted to make sure I was buffering properly. So, coffee, lime and sulphur are okay? I'm checking to see if there are any downsides to this. Also curious about beer, vinegar, baking soda, etc, and other potential buffers. Anyways, thank you for any response or opinions. If buffers are small enough to not make a significant difference in the substrate, thats good enough for me. I've just been trying to find something on this with total failure. So far, I haven't had problems, but, I wanted to check my buffers before I continue forward. Thank you,

See if you can get some water BEFORE the reverse osmosis machine. Is there a valve in your basement? I was concerned when I first started, as my well water has a pH of 7.5. After mixing it with coir, verm, coffee, gypsum I'm pretty sure those alone drop my pH to 7 or below. I don't even test anymore, and my cubes seem to like it.

Sulfur and coffee will lower pH, and lime will raise it. You need to decide which way you want to go. A substrate pH of around 6 is fine. RR
