ammonia aroma worsening

fresh poop was shoveled and stored in a large rubbermaid for a couple of months with the lid on and off.
it never really dried satisfactorily this way, so it was layed out (somewhat thinly) on a tarp in the garage and left with the gentle breeze of a box fan to further dehydrate for 4 days.
after this time it was dumped back into the rubbermaid container and set aside for use.
afoaf of afoaf went to go use this dried horse manure and upon grabbing a couple of handfuls was overwhelmed by the pungent odor of ammonia...and I mean OVERCOME!
knocked down, gagging, struggling for air....
the odor, before drying, was nothing more than the fresh, earthly smell of horse dirt.
my question, in so many words, is why?
did I store, dry or otherwise do something wrong?
was it a bad idea to let my cats use the rubbermaid bin of horse shit as a litter box?

sounds like it wasn't dry enough and started composting.

what produces ammonia during composting?
is it a side effect of the chemical changes occuring in the pile or of some microorganisms?
TMC only says what to add to aid the breakdown of ammonia (or ammonia producing agents).
I wonder if I've simply angered the gods...

Ammonia (NH4) is produced when bacteria break down urea or protein and this is a part of the normal composting of manure. It sounds like the container was too air-tight. With a good supply of oxygen, the ammonia should continue to breakdown into nitrogen and water.
