L. decastes is a reasonably common good edible mushroom. In a taste test by the Danish mycological society it was voted one of the best tasting edible mushrooms. Common names are clustered domecap or fried chicken mushroom. Commercial cultivation appears to be in it’s infancy in Japan. It has great commercial potential, not only because of the flavour, but also it’s almost elastic consistency makes it very robust. It is not damaged easily and has a good shelf-life. Although found on the ground, rhizomorphs from growing mushrooms have been traced back to buried rotting wood.  (Kinuta, M., T. Furuno, A. Takahashi, and I. Furukawa. 1995. Optimal fruiting substrates are still being developed. Cultivation has been successful on bark compost (composted for 1 year) and by re-utilizing spent substrate blocks of other wood rotters  (Akamatsu, Y. 1998. Reutilization of culture wastes of Pleurotus ostreatus and Pholiota nameko for cultivation of Lyophyllum decastes. Journal of Wood Science 44: 417-420.)

I have 2 L. dec. strains, one I found locally and one from Carsten (mycelio).  To get some idea of what it likes to grow on, I half-filled 12ml centrifuge tubes with different substrates and sterilized them. A piece of L. dec. colonised agar was then dropped into each tube, and sealed.  The rate at which the mycelium grows through each substrate can then be measured, along with mycelial density.


Results from the 2 strains are below.

The woody mulch compost I got from my farmer friend. It's long composted woody waste that he uses to much his fruit bushes, it's the closest I could come up with to 'bark compost' that the Japanese have used. Although it gave the fastest growth, the mycelium is very thin, looking like it has little nutritional value. This was true with added KM substrate as well. Mycelium was much thicker in the compost based substrates. Unfortunately I didn't run any compost/KM with bran tubes, which I think would be optimum. The mycelium in the WMC tubes has thickened up considerably after leaving them for a couple of months, so this probably needs trying out in some production blocks.

While this was going on, I inoculated a bag of agaricus compost/Km sub (7:3) with L. dec wheat spawn. Leap off into the substrate was slow, with almost no growth into the substrate for several days. It then started to colonise the bag slowly. After about 6 weeks, growth in the bag appeared to completely stall, with some areas densely colonised and others not at all. This has happened in a couple of similar bags that I tried. The partly colonized bag was cased with untreated garden soil. After about a month primordia formed which all developed. Mushroom growth was pretty slow, taking almost 2 weeks to reach maturity.







Temperatures in my grow room over this time were in the teens (C). There is very little colour in the caps compared to how they look naturally, which I assume is due to insufficient light. I left some developing caps in a better lit window and cap colour started to develop over a few days.


I was impressed with the amount of mushrooms from a poorly colonised block and am pretty sure that with a better fruiting substrate it will give a decent yield. I’m not giving this culture away at the moment.

Have you tasted them yet?  Do they indeed taste like fried chicken if breaded and fried?


As a pescetarian and mushroom lover I am quite interested in these.

They taste good, I can understand the fried chicken analogy. Taste and texture are similar, though I've read that a lot of people don't agree

Those people were prolly looking to bite into a piece of chicken.

I'm sure it's as much mushroomy as chicken-y; just interesting that there's a correlation at all.

Anyone here tried "chicken of the wood" (polyporus sulfureus?) they really taste like KFC fried chicken when cooked. Does this one taste similar?
