When you get some fruit off these guys would you mind posting a tasters choice comparison type dealy? I am growing blue oysters. Not at fruiting yet, but I was wondering how the different varieties compare.

Myxomycota, I've only tried the Pearl Oyster, so I'm pretty interested to see how the others taste myself. Maybe I'll set up a tasting booth at the farmers market and see what's most popular. Once things start moving I can judge by customer feedback and sales.
The Phoenix has started to pin in the incubation room. It along with the Pink and Blue have been moved to the fruiting room.

It's been around 65% RH outside so I would think the incubation room should be close to that.
I load 2/3 of a small square bale per batch, I'd say around 30 lbs.

Why is the mycelium for the Blue on the left so much more "white" and apparent than the others?

Probably just strain specific. I have a few different cultures of p. columbinus and they all tend to grow really thick. Thicker than my ostreatus or others.

Yep, just a characteristic of P. columbinus. Although it has shown strong mycelial growth it has yet to produce any pins.
Here's 2 days worth of growth with some closeups of the same clusters as before.
  
I picked this cluster today. The gills on the top mushrooms were starting to turn up. It weighed in at 1/4 lb and is about the size of my fist.
To anyone who has grown Pleurotus djamor before, am I on the right track picking them at this point or will they get bigger without over maturing?

Those pinks are nice, though they seem a bit small. You may leave them for another day or two, but you have to watch them carefully, while they continue to grow. As soon as the margin becomes flat, they usually lose color, develop a fishy smell and start rotting at the sides, where the cap meets the stem. Picking them too early is the lesser evil.

have you considered bags to replace the jars? i also have two pc's that can do 10 jars each, but using filter patch bags i can fit 3-4 times as much spawn in the PC at a time.

Good work Grobo! The pinks look nice, they are on the small side but I have never had a pink(d'jamor) that got huge. The only thing you can do to get them bigger is cool the temperature and increase FAE&RH, but that would be tricky growing all the different Oysters at the same time. I am working on isolating a warmer weather Pink Oyster flabellatus/salmoneo which should grow larger than the djamor with temps over 60f.
The Blues have always needed higher humidity and tons of fresh air to fruit, which again may be hard with your set up. I would recommend opening the holes slightly more and giving them a nice misting daily. If you get the Blues dialed in you will be happy.
The Kings, Phy and Pearl are the easiest to grow together as they all fruit well in the same conditions.

Very nice work and a good aim.
I can give a couple of predictions having grown and sold most of these;
Everyone will LOVE the kings
Most will love the blues
Quite a lot will say they don't like the pinks, it's a texture combined with taste thing.

I picked some Pink and Phoenix today and took them to a local market. Around 4 clusters of Phoenix and 8 of Pink with a total weight of 4 lbs.
The produce manager was glad to see me. She said that after they sold out of my last batch they tried to go back to the imported mushroom they had been getting before but their customers wouldn't buy them. She won't be ordering any more imports so now I'm their exclusive mushroom supplier.
Even though it was just a few pounds it felt good to walk out with some money in my pocket after a month of working with nothing to show.

I have given it some. Right now I'm good with 20 jars per day. I could also do without the added expense and waste of plastic. If I want to step up production I may switch to bags rather than buying more pressure cookers.
How much grain do you put in each bag? Have you had any problems with bags stalling out or going anaerobic in the center?

Just the info I was looking for.
I've upgraded my air intake to a HEPA filter and 400 CFM fan with a speed controller so I can get any amount of fresh air needed.
Humidity isn't doing as good. The disks on my ultrasonic mister keep wearing out so humidity was around 60%. I've gone back to a humidifier setup and humidity is up to 80%. Once the replacement parts arrive for my mister I'll be able to get up to saturation humidity again.
I've decided that using air-conditioning to regulate temperature isn't something I'm willing to do so temperature control is out of my hands. So far temperatures haven't been above 66°F (19°C) in the room.
For the rest of the summer I'll have to concentrate production on the more heat tolerant varieties.
Good call on the Blues, the mycelium grew in so thick that it was sticking to the plastic and barely letting any fresh air in. Hopefully with misting, increased air and humidity they'll start producing soon.
What temperature do you find the Blues perform best in?

Kind of a random thought. I am currently taking an upper division genetics class, and we spent a bit of time on recessivity and dominance on phenotypes that are coded for by multiple genes. So what I am wondering about has to do with the amount of varience observed in the Oyster mushrooms and whether these mutant phenotypes are a function of a single gene mutation or multiple genes coding for proteins in some kind of synthesis reaction.
 This is a drawing I made for a problem having to do with flower color, but the principle is same. You have some precursor, which gene 1 modifies into precursor 2, which gene 2 modifies into the final product. So a mutation in either gene changes the final phenotype. Do you know if any one has done any testing to figure out which phenotypes are recessive towards the others in Oysters, and subsequently, is non-wildtype color a single gene mutation, i.e. many alleles coding for the same gene, or the result of many mutations in a synthetic pathway?

Things are getting back on track around here. I got some replacement parts for my foggers. Now I'm running two foggers in my bucket. It's keeping the room at about 85% RH with around 150 CFM of air turnover.
Looks like the added humidity and fresh air payed off as the Blues have started to fruit.


The second batch of Pink and Phoenix logs have started to fruit. Again the Pink pinned 10 days after inoculation with the Phoenix a few days after.
None of the other oysters pinned in the incubation room but have colonized nicely. I now have at least one of each type in the fruiting room. They range from 2-3 weeks from inoculation.

How many logs can you fit in there? Is there an optimal distance to keep between logs and away from walls to maximize the use of space without hurting your grow?

Did i get the steps right? Hmm, when one fills up the bag with straw and Grain Spawn,and packs it tight, it is then taken to the growing room. Then, holes are punctured in the bags and the tempt, humidity, etc are all kept accordingly.
Or does one only puncture the bag after a full colonization?

Looking great grobo, cant wait to see more results. Did you calculate the BE for the 1st flush of your pink & phoenix varieties yet? And how many days was it from the 1st flush to the start of the 2nd for those strains? Keep up the good work

I think you need to put holes in the bag as soon as you fill with straw and spawn. The straw needs to breath or it will go anaerobic and rot.
