experimental move...think it would work?

here's the deal...while sterilising some jars by boiling them the foil apparently wasn't on tight enoughj and extra water got inside. i went ahead and inoculated them anyway, and a week later, they are colonising. there is visibly too much water in them, and i know it owuldn't work to treat them as my normal pf cakes. so i figured i would try to case them instead, since casings need the extra moisture, right? any suggestions on this?? i didn't want to waste all these jars (about 9).

As long as they colonize you can fruit them any way you like even if the water content is a little high. You can do cakes or casings with no problem.

"Of all tyrannies, a tyranny exercised for the good of its victims may be the most oppressive. It may be better to live under robber barons than under omnipotent moral busybodies. The robber baron's cruelty may sometimes sleep, his cupidity may at some point be satiated; but those who torment us for our own good will torment us without end, for they do so with the approval of their own conscience." - C.S. Lewis

^^ Yup ^^ You should be more worried about the incubation period if the jars have too much water. This could lead to contamination. If they colonize properly, they can be birthed in any manner you desire.

The proper penalty of ignorance, which is of course that those who don't know should learn from those who do... - Plato
