Can I remove some of the cakes with pins and dunk them and then gring em up and throw em into half pint jars to make use of them?

That sounds like a dangerous thing to do. If the cakes have been partially dried out, the mycelium has suffered lots of stress. If you crumble them, you put even more stress on the mycelium and make it more prone to contamination.
I'd just let them sit in a proper fruiting environment with proper humidity and wait what happens.
You might want to get a second opinion on this though.

If you have less than optimal conditions then those pins may only be stalling, and not already aborted. Always give nature a fighting chance. If you don't have enough humidity, then your mushrooms can not breath. If you do not have enough water, then the cells can not expand. Big mushrooms suck up a ton of water.

Honestly I have personally never used cakes so don't have a direct answer for that, sorry brother, going to have to have one of the more seasoned vets answer that one.

No, you cant do this. And its not because they're dried out, that doesnt matter. Its because they are no longer sterile! You must take a colonized cake and fresh new jars and do it in a glovebox, right out of the jars. Once fruiting you can not turn them into more cakes via G2G.
