really it depends, if you're having a ragu for the sauce then you want something a little lighter such as a Granita, a little heavier, and honestly easier to pull off than the Tiramisu is Zuppa Inglese (english soup). Barbajada is great if the weather is cool and it can be spiked with a bit of amaretto, irish creme and a dark, sweet italian brandy such as Gran Gala which has an orange flavor, Gran Mariner could substitute but go sparingly because you only want a hit of the flavor or it could lend too much of a cough syrup taste and even cause any creams to clabber

fixed rate, never variable, variable rates can be tied to any arbitrary source and not simply to the prime rate, if it's attached to the rate of hog futures then you'd currently see a tripling in your interest rates. variable rates are for 2 kinds of people, those with shitty credit and no information on how the financial game is played and those with enough money to pay off the property prior to the scheduled rate increase. only one comes out a winner.
