To some people it looks alot like erratic plating of strange flavors and techniques.  But you really gotta appreciate the originality with his food. 



It's a really really strange style of cooking, very new to me, very intriguing.  Enjoy the video guys.

Im not terribly impressed. it looks unfinished...it doesnt sound or look good.
I think its a bunch of hype.

What do you think of his technique for making the eggplant sauce?

It's not supposed to be like a big plate of meat and potatos.


It's simply a concept, and idea of flavors.  Pickled blanched red onions, roasted green pepper, oil poaching calimari, and charred eggplant. 


I don't know about you, but I've never had that combination of flavors before.

a technique I've seen done by both Aduriz and Berasetegui. similar to the leek charcoal everyone else seems to be doing lately.

Do you basically get a really intensified flavor?  I'd assume all that oven drying would reduce things down to the bare solids.


How does it enhance flavoring?

Yes, to intensity the flavor, remember theirs also a considerable amount of the actual eggplant flesh still their to not make it as bitter as you make think, it gives the flavor of a smoked/grilled taste, and a loamy vegetal nuance.

I'd actually be more intrigued with that squid's taste and texture, it must be extremely fresh.

A lot of people don't realize that Michel Bras created that landscape plating style so indicative of what El Bulli popularized and everyone took off with since. I'm thankful I have my first run hardcover no out of print.
