Rye Seeds & Aluminum Tray [advice]

Hi,
I am currently working out the steps before I start my the process. I have a small problem, and I am looking for help from experienced growers.
My problem involves going from one step to the next in this tek.
What happens is I fill such jar with rye seed, and water.
After it is pressure cooked, the rye seed is inoculated.
At which point I become confused!
Do I wait for colonization, then pour the berries into the tray with the substrate mix? How come nothing becomes contaminated at this step?
I specifically wanted to use aluminum trays.
I hope I provided enough information
In summary, I want to use rye berries, cook them and inoculate them. Thereafter I want to toss the berries in the vermiculite following up with other small steps.
The confusion lies on what happens after I inoculate the jar of rye berries; how do I know they are ready to go in the aluminum tray?
I believe I could be misunderstanding a few steps as well. Any word of advice?
Lastly, if I want to grow in bulk, I should be using berries for P. cub right?
I'm sure I have a lot to be corrected on.

In addition, I planned to PC the rye berries and water together.
I have read that it is the least desirable method, why?
I'm concerned about the difference between rye seeds and berries. If I'm going to use aluminum trays along with a vermiculite and casing method; would I need rye berries or seeds? I keep reading different things.
Also, I've spent a lot of time searching the forums and the website before asking the problem is there seems to be so many different methods that it is difficult to say what is best.
However, under my conditions I'm looking to do this with many aluminum trays.
If I am using the tray method, would I need many jars to fill the trays or just a few since I am not using the cake method?

rye berries are rye seeds. You don't want Rye Grass Seed
watch these videos www.mushroomvideos.com
& learn.
Don't use aluminum as the mycelium will eat through it.
You've got a lot of research to do so learn to USTF...
I read on here for 5 months before even posting then it was another 2 months before I started growing...

i want to hear thoughts from experienced growers about the rye berry substrate
also, what are alternatives to the aluminum trays? from what i read they indeed work but for only so long.
how about plastics? or plastic bin or trays for example? is glass preferable?
