need a quick refresher course

so i retired from mycology for a while due to being haunted by bacteria contam. so i was looking for i guess the major causing or flaws in my ways

i typically soak for 12-24 hrs

i think i usually rinse then soaked with hot water from tap

as for lids ive tried micropore tape, flipped lids, sealed lids lol..

usually put water in pressure cooking to an inch above bottom of jars or a bit less, but always touching

then i put burner on high i let the steam excape for 5 mins or so, let it hit 15psi then i put timer on for 1 or 130 i can't remember i think it was 130 and then i start turning heat down to lowest that will hold at 15, i usually get it down to like 14 to 14.5 and walk away knowing it will rise back up

then i let it cool all the way down, sometimes i leave it sit overnight but that usually leads to stuck/brick of grains and/or exploded, and ive tried taking them out right away and shaking/ leaving them cool.

as for inclination ive tried liquid/agar in flowhood/glovebox/both lol  altho my flowhood is in a closet and maybe that is just creating a turbulance aka worthless?  then agian my glovebox fails to so can't be all that

hmm oh and my lc's usually fail to but ironically my agar wedges grow good and clean usually works great:confused:

ive tried wearing masks/ always washed hands alot

i duno my hunch is that im not pressure cooking long enough and my grain saturation is off, and grain prep is off, or i just have some insanely dirty dirty birdseed shipped in fresh from the dump

oh which reminds me for grain i have a bucket in bucket setup with holes and a spout in the bottom bucket to drain.  thing is the grain at the bottom is usually a little wetter when i get to it.  basically i can be sure nothing more will drain out of the grain since its a bucket in bucket then i wait about 20 mins.  but i think i still don't have my bearings on the wetness, i made some shiitake jars about 2 months ago and there just now finishing up im pretty sure they were infected by it got fought off i thought i made them alot dryer than usual to try and fight this but i think they still ended up with a touch of the bacteria so i dunno what to think anymore maybe i should try letting them dry for an hour next time or empty the bucket onto some newspaper or something lol im so tired of this bacteria:lol: it just ruins all the fun out of this hobby i mean id love to see some green mold or something but:foreheadslap: i just can't grow anything but bacteria

Try getting some rye,  it is much easier to use.  WBS is hard to get just right but when you do your final rinse you need to strain it very well and most people use a towel to dump the grain on to dry it off.
Also how long are you PCing for?

i can't remember exactly but im sure at one point it was up to an hour and a half, also i think im mildly higher above sealevel than most if that has anything to do with psi

90 minutes is good for quarts,  unless your pc isn't holding pressure.
When you are ready post some pictures of what you have and ask some questions.  Could be any number of thing causing problems.

So your LC inoculation always fails and agar works?  Then stop using LC.  I almost quit this hobby before I even started because I was using LC and got nothing but contams.  Thought I just sucked.  Turns out I just sucked at LC's which I'm not too concerned about.

what im saying is that i can make agar, and grow on agar and everythings just fine, its when i try to grow on grain that step is where i usually fail or have contams and then the shiitake eventually fight it off or w/e

What's the consistency of your grain like?  It should be dry on the outside and rattle when you shake it like a maraca.

I have never ever had luck with soaking.  I strictly simmer wbs.  Rinse thoroughly before simmering and rinse thoroughly after (using cold water).  Simmer till they increase in size and are easy to smoosh in between your index finger and thumb.  After rinsing in a colander i lay the wbs on a bath towel and pat dry with paper towels.  Load up your jars and pc for 1.5hrs.  I have a 100% success rate doing this.

I had the same problems you had until i started doing it this way.  Also let the pressure drop on its own and definitely shake the jars while still hot.

thats starting to sound like my problem ill try it your way, i think i was going by those old guides that said something like the grain should be shiny and that most shouldn't stick to the spoon.  So it sounds like i should be going much dryer than i have been.  i wonder if soaking just causes a bunch of bacteria to grow, i wonder if short soaks like 6-8 hours would work, at anyrate ill start out doing the simmering.  Ive tried it i think only once but i didn't hear about the smooshy grain part so that gives me something to shoot for.

If u could be a bit more specific on simmering just so im sure im doing that part right, are u just bringing it to a boil,putting on low, testing off and on?

I fill the pot so the water is above the grain by an inch.  To start with i crank up the heat and stir often so the grain on the bottom doesnt get overcooked.  Once the water starts to boil i turn the heat back down and continue stirring occasionally.  The water level will drop as the seeds absorb water and just about double in size(about 40 mins to get to this point), add a little more water to cover the seeds.  Cook for maybe 10 more mins or so.  Test the grain, it shouldn't be super squishy, just enough that you have to pinch with a little bit of pressure.  Rinse thoroughly in colander and lay the seed on a bath towel.  Pat the seeds dry with paper towels.  RR has a good test for moisture- Place a few seeds on piece of toilet paper.  If it breaks through the tp its too wet, if it doesn't you're good to go.
