Yes the elm oyster I like, quite tasty. I got it from a trade with someone on the shroomery, I cannot remember who. It seems like a good strain. I grew this one up for the display too. I work with a quite a few asians and they are nuts about this fungus, I brought some in for them to share. I have one Korean guy ready to go into business with me. However, just like me at the moment he does not have mush in the way of capital to invest, plus he is going to move soon.

Good work! They're beautiful!
They look just like oysters but are supposed to be much better tasting.
Do they reach also higher prices then oysters?

Nice, do you cut the bag were you see pins forming or do they form were you cut?

Thanks. I slit the bag first. originally, I was just going to cut the tops of the bag, but in my preliminary attempts (mainly to get the timing down so that I would have mushrooms that were big but not old), I found that the growth chambers were not made with mushroom gultivation in mind. These chambers have a very strong fan to keep the air moving and distribute the temperature, and even though the humidity was high the moving air dried out the sawdust block too quickly. So to answer your question in an overly long way, I had to slit the sides of the bag, and most of the primordia formed there. In some cases I cu t the bag where they were forming.

Z- as far as price I do not know. If you have buyers that you can convince your are giving them superior mushrooms then I would think that you could charge a higher price. I am doing a medium sized (30 logs) pilot project for some gourmet restuarants in my area and I intend to attempt to talk them into to a higher price for the H. ulmarius, so we will see.
