Best way to position a 55-gallon plastic closed-head pasteurizer?

Hey everyone
I recently fucked up my rubbermade tote pasteurizer pretty good. The Mr and I got really high on a cold night and thought It would be a good idea to wire in the PC exhaust in addition to the standard wall paper steamer we have it hooked into without insulation.
Boy was that a nightmare!! The buckets that held it up managed to help it warp into a U shape making the tub (filled with at least 50 pounds of substrate) fall over.
So we are getting rid of that haha. I recently got ahold of a 55 gallon plastic drum (link to similar barrel below) the only issue I need help with is the rack/ substrate bag placement. Should we cut the top off of the barrel, place it upright then build a tiered wooden/non melting rack structure to place the substrate in? or lay it horizontally like RR's has set up?
the issue I see with the horizontal setup will be securing the open end. With the vertical setup, we could place a piece of wood on top with a few heavy things and that should be enough for it to get to ideal pasteurization temps

that does sound like a nitemare...no more so than putting anything wooden in it..lol
pick up a couple of grill grates for shelves if your standing it up. you can get metal angle irons and some bolts for shelves at your hardware store as well .
it is closed head ?
in either scenario the correct choice would be open head for the barrel, it will still come with a lid and lock ring.
the only reason to have a closed head is if you are making a water pasteurizer on its side, or are making a boiler tank like RR has.

Horizontally makes the most sense IMO. It would be easier to load your bags from the side on one or 2 racks than reaching down from the top. To seal the opening, you could just duct tape the lid back on after loading the barrel up and feed the steam in through one of the ports built into the lid.

duct tape? I used duct tape to hold foam insolation inside my previous unit, the adhesive didn't last the whole process (and I bought the good stuff $$) the minimal hot steam really did work to it. Can you recommend a more "reusable" option? I was thinking of cutting a piece of wood the size of the hole but Im a little unsure how it would attach.

Duct tape is cheap, easy and plentiful. Duct tape inside the unit would definitely get nasty, but it should hold up if you're just using it to hold the lid in place from the outside, no?
