Foods of the "poor" that now everyone eats

I'm trying to search for an article on this, but the results I'm getting aren't what I'm looking for. Seeing if anyone else can chime in on this. Not really looking for why they are "main stream" or possibly "high class" food, but that they now are. Also you can include examples of things that people didn't eat before but now they do.
Example:
Lobster, used to be fed to servants during colonial times everyday. They eventually rebelled and had agreements with their employers that it wouldn't be served more than a couple times a week. It was also what prisoners and the poor ate during that time period.
Skirt Steak, was just scrap meat, but now expensive and popular due to the large Hispanic population and demand for fajitas.
Chicken wings, used to be used to make stock or thrown away. Deep fried and tossed with butter and hot sauce, you can charge >$1 for 2/3 of the sections of a chicken wing.

Sushi, many kinds of offal.
Sweetbreads. And as you've mentioned, shellfish.
There's also foods which were once considered elite and exclusive which are now considered common, like chicken breast. Or any kind of eggs.

just about all italian food.
nowadays you can make anything high end or fancy just by using good quality ingredients and knowing how to cook them properly.

Brown rice: Used to be only for the poor because of how fast it can go rancid compared to milled rice.
Braunschweiger: Used to be dirt cheap, now its fairly pricey. Maybe its just inflation though.
Tomatoes: Only the poor would resort to eating tomatoes as many believed it the fruit was poisonous.

I am poor, we eat alot of meats, make our own stocks from rendering the fat, seasonings, and fresh vegitables.
Most poor(common) dishes tend to be types of stews/soups.
These can be easily made in a crock pot/roaster, and made to be VERY delicious using cheaper cuts of meat, and fresh veggies for 2 weeks only runs my wifey and I the 25-35 dollar range, 3 large cheap cuts of roasts (we take whats on sale be it chicken pork or beef) running 12 dollars on average.
It's kinda varietyless, but still delicious, and very economical, a 2 week grocery list for us hits the 65-75$ price range.
Our meat though comes from a local butcher shop in a small town where my parents live, all free range and super cheap (delmonico steaks are 6$/lb!!!!)

I get nervous sometimes when I see fancier presentations. It tells me they're going to charge more.

I don't equate fancy presentation necisserly with quality. If I know that they're using quality ingredients sourced locally or by traditional means, that's enough for me to pony up the money nice plating or not. I've been to plenty of restaurants that charged a lot but gave you plates that looked like you could have made them personally at home, but my god did it taste good, most were old school European establishments that still stick with the traditional dishes and plating style.
On the other hand I've had more than a few dishes at say, WD-50 that looked like a million dollar Salvador Dali painting but didn't deliver on taste or even execution. To me waisting good quality ingredients by not cooking them properly is the biggest sin a chef can commit.

that's like complaining your picasso doesn't look realistic.
If you want to gorge yourself go to a buffet, most of this kind of food is served in multiple courses, believe me you'll be full in the end. It's about the quality of the ingredients and cooking skill and unfortunately those things get very expensive when made in large amounts. and it's not like you'll be able to eat a whole lobe of foie or an entire bushel of sea urchins, these things are very rich and require balance with other components. Unfortunately too many in this country equate size with quality and value and don't understand that food preparation at this level can also be art in itself.

I mean, pretty much ALL food in this country and most westernized Countries (and those wierdos in Japan) overcharge the shit out of food.
But within these pricier places, there are restaurants where you get a realtively big bang for your buck.
A 10 course tasting dinner would run you about $135 at some places.
And considering 1. the sheer diversity of proteins, all cooked individually and with multiple complex components
and
2. the amount of work and preparation that goes into every plate of food is quite significant.
Going to places like this doesn't mean I shun more common casual dining places, I'll eat Tommy's chili cheeseburgers till I die.
But every once in a while you want to try something new, different in flavors, than the usually stuff we eat in this country.

I don't think the majority of the food in this country is expensive in relative terms. It sure is abundant and with abundancy comes cheap commercialized crap, the majority of which Americans live on, what IS overpriced in this country is anything that is grown or made the old fashioned way ie: organic, local, farmers market sourced ingredients, anything that isn't factory farm grown or processed; things that in Europe seem to be the norm but they don't treat it as something you only get at Dean & Deluca or only afforded by well heeled people, by contrast the food QUALITY in other countries even in places like China are much better than the average food that's available here, and alot of that has to do with how the average American views food and cuisine in general.
There's a market for all types of cuisine, it's not like the average person can eat $135 tasting menus on a daily basis, my point is that to try and eat "healthy" or "local" or "organic" cost sufficiently more here than it does anywhere else.
