Overlay without a casing?

Can overlay happen with a BRF flatcake that doesn't have any kind of a casing layer on it? My buddy says his is sure getting fluffy.

no, since it has nothing to "overlay".

Cakes fluffing up is good before pinning because hopefully this fluff will turn into knots. Not exactly sure though. Fluffy growth is bad if you are fruiting, and means you need more air exchange.

You know how the mycellium will kind of poke up out of the cake into the air in little shoots? That is ALL over my buddy's uncased flatcakes. It that OK?

Yes, they are called knots, case or fruit them.

My buddy has a lot of experience with straight cakes. Maybe he's a little jumpy as this is his first venture away from them. I don't think they're hyphal knots. They're more like super-rhyzomorphic strands of mycellium. But I guess it sounds like it's nothing to worry about. Just never seen them on cakes at all.
