PC'd grain jars. How long can they wait?

A friend's jars were PC'd the other day. Have been sitting in a sterile rubbermaid with the lid on, so they shouldn't dry out too fast.

How long will they wait for him to get his act together and inoculate?

He just inoculated them. Those fucking stupid polyfill filters got poked into 3 of the jars when he was trying to inoculate.

What problems would possibly arise from waiting as long as he did (a few days) or waited longer?

As long as you already sterilized them...you should be fine.
I have waited over a week to inoculate Rye grain jars...and they came out fine.

PC mean STERILISED. I'm I wrong? My grand mother used to PC her spagatti sauce and it lasted for years at room temp.

btw She died at 104!

A substrate jar isn't like your grand ma's spagatti sauce...

the substrate jars will dry out at room temp if they sit too long.

I bet she had some interesting stories.

Hey, try 21 years!! Hope you're still alive...

So I am getting into a new project of offering my community pre-sterilized jars. I am going to use whole oats soaked overnight (no boil) and sterilize at 15 psi for 90 mins.

I will leave the 2 pack of jars packaged and ready for sale, but do you got any good ideas you can share that would help keep my grain in optimal condition for say at least 1 month?
