95 is way too hot,its not the death threshold of mycelium but it is very stressful, you might of damaged its growth cycle and exposing them to light is IMO a good thing right from inoculation

I already culled out all the blue. It's regrowing, but minimally. And it's giving me those green shoots still.
Really, I've just never seen or heard of anything like this before. Any insight into what is happening is what I'm looking for. Why are my mushrooms cat tails and not mushrooms?

What do you mean by "scooped the myco out," this was a grain jar right? After you break it up by shaking you should be able to just "pour" it out onto the sub and break up w/ clean gloved hands (if the chunks are too big). Turning blue happens, that can be caused from lack of moisture, being banged around in the jar, it's just the bruising of the psilocybin. To a noob it can be mistaken for Trichoderma (green mold).

Also, as the others stated 95 is way too high.

That's because the seeds or berries you used as spawn didn't die, and so they are sprouting. If they had been properly pressure cooked, they'd be dead and wouldn't sprout like that.
Your mushrooms might still come. It doesn't look like you have contams yet, so that's a good thing. Just watch it, and wait for changes.

Some were WBS, some were PF tek. One amazonian inoculated into a 50/50 PFtek/WBS.
I wasn't careful so that blue I pulled out was probably just the bruising and has set me back at least 2-3 weeks.
I know better how to get spores into jars. How do I get myco out? Cutting with a sterile knife?

What did I do wrong and what is going on?
I can be the laughing stock of shroomery. Just help me out so I can pass the torch.
First of all check whether there are any other nasties on your substrate (apart from the herbs ). If there are not - just simply dump everything outside of your home. Why? Because your substrate has not been colonized entirely and you will definitely grow more green stuff on it (I mean, apart from the herbs )
If there is anything green on there(I mean, apart from the herbs ), you need to find a way to dispose it without spreading too much mold spores. If you managed that: Clean everything, especially your ENTIRE growing room with bleach and ethanoic acid. Your error was definitely that your spawn (WBS) was not sterilized. Thus your seed were able to germinate. Next time PC everything for AT LEAST one hour (starting once your PC reached 1 bar over pressure) prior to inoculation. Moreover, next time, wait till your entire substrate is colonized, let it consolidate and then birth it.

you shouldn't need to cut if you are using the right jars for PF style jars. you NEED wide mouth or it'll never come out. If you're doing seed spawn it should just shake out so either you are doing something wrong or you're very confused.

It'll probably contaminate. Dump it at the first sign of any contaminations. But you might get lucky. Miracles have happened. And it doesn't seem contam'd yet.

I did not wait for full colonization. They were one quart jars. They ranged from 95% colonized to 50% colonized. The tub that turned blue was white at first and the entire box turned blue very quickly.

You gotta wait, unless there is a good reason to birth. You'll have to wait either way you go so I just recommend to wait. As I said earlier I have to wait for my jars to consolidate they will do so in the jar or not so better to leave em in the jars than not.
I feel as though I keep repeating myself, repeating myself.

Sorry, but I have to disagree. It will certainly contaminate (actually it already is ), if it has not been colonized properly prior to birthing. Trich is a pita and once you got it, it's gonna stay by your side like your shadow.
