I'm new to this forum and figured this is a great topic for my first post. I Home Brew Beer and was wondering if any other home brewers have any funny/interesting stories, advice, or favorite recipes? I just opened up a Tax Day Copper IPA and a pretty hoppy Bicycle Day Pale Ale, both extract brewed.

I have been wanting to home brew for so long but keep putting it off. I remember reading the "Alaskans bootlegger bible" and was amazed that by law each individual is allowed to make up to 200 gallons of home brewed beer or wine for personal consumption.

You are alright in my book ElChe. BTW pale ales are my favorite.

I'm a home brewer that doesn't home brew anymore. I was dry hopping a double IPA yesterday into a 15 bbl fermenter where we stuffed 18 bbl in. I took off the pressure relief valve on the top and started dumping the hops in. The beer was about 2 days out, but we dry hop it and cap it to keep the aroma in. Anyways, the beer started foaming and I felt the CO2 rushing out of the port. I peek in and see a wall of foam climbing steadily higher. I grab the pressure relief valve and begin to reach to put it back on, and BOOOOOOOOM! It went Old Faithful on me, blasted the ceiling and completely drenching me. It was hilarious, well, not at that exact moment, but afterwards.

Another home brewer here. I'm a brewer, a dues-paying member of the BN army, and pretty much an all around beer nerd. I got into home brewing through mushrooms, if you can believe it, because after I found out yeast was a fungus I thought "how hard can it be?"
And now, those two things occupy the bulk of my hobby time.

AHA / Maltose Falcon / BeerAdvocate member here. Been doing extract brews since last October and after eight or nine of those, now have three all grain brews under my belt. Unfortunately, I'm running out of keg space, so I'll have a little lull while I contemplate the production of my very own Electric Brewery this summer. Just got my 20 gallon Blichmann Boil Kettle delivered. For now I'm doing my all grain "brew in a bag" style, and it's working out quite well! Almost makes me question the desire to spend $6000 on the electric brewery. BUT, as I have a mind to probe the feasibility of a brewing related business of my own, I figure I may as well commit myself to the project so as to be able to replicate recipes to a more exacting standard and in scaled up quantity. Not to mention, it'll just be a plain kick ass home brewery!
Currently on tap: Belgian Grand Cru (wit beer) 6 lbs extra light DME, 2 lbs clover honey, 8 oz carapils, 2 oz Hallertau pellets, 1 oz coriander, 0.5 oz sweet orange peel WLT 400 - White Labs Belgian Wit Ale
All grain IPA 11 lbs golden promise + 1 lb munich + 12oz Crystal 60L 154*F at strike, overheated to 170 at 20 minutes , cooled to 152 and left to sit no flame for remainder of mash, dropped to 140* @ 60 min. 1 oz columbus @ 60, 1 oz centennial @ 15, 1 oz centennial @ 5, 1.5 oz cascade dry hop Wyeast 1056 "Chico Strain"
All grain "Big Fucking Red" c/o Falcon's Club Shop brew 12 lbs pilsner, 1.5 lbs wheat, 1.25 lbs munich, .25 lbs Crystal 75L, .13 lbs Cyrstal 130L, .13 lbs roasted varley dough in at 130*F, decot 1/2 pilsner and raise to 149*F 90 minutes .5 oz Columbus 60 min .4 oz Columbus 20 min .25 oz Amarillo Gold 20 min .14 oz Centennial 5 min .14 oz Crystal 5 min .14 oz Simcoe 5 min American Ale Yeast
- Apfelwein
Fermenting and/or conditioning:- More Apfelwein
- Vanilla Cream Chocolate Stout (extract with fresh vanilla beans and chocolate malt)
- Belgian Abbey Dubbel (all grain pils/munich/caramunich/specialB, tettnanger whole leaf hops, candy syrup)

Gotta love that Bicycle Day Pale Ale. My folks gave it an A+ for AWESOMELY TASTY.
Now all we need is to take that bitch to the next level of hoppy goodness.
Then... we need to make a kegerator. We could buy one, but... Why do that when we can make our own?
BTW, you better come over later so we can further explore our two beers.

Thanks for the welcome, and glad to find other brewers on here. it seems that pale ale is popular, though the IPA has a thicker, almost warming vi8scosity to it

Been brewing pretty solid for a year now, want to go to a full on all grain setup but am in the middle of moving.
My next investment is a keggerator.
My current on tap is a Trappist Dubbel and a 2xIPA

seeing as you are brewing a 2x IPA, I wish to ask, what is your favorite type of hops and why? I've become fond of Centennial Hops

I really enjoy the flavor of cascade mixed with some citra. I like the nice citrusy yet bitter hoppiness of the mix, and this will probably be the foundation of the next IPA I make.
Think something around a Southern Tiere 2xIPA.

i help some friends with home brewing, but i've very much learning myself, so i don't have very good advice.
we never use a recipe, we just wing it with what we have. we always use mixed grain and malt, if we have honey, we'll add that. if seems risky and foolish but we always get great brew. oh, and i think dry hopping is better then adding it to the boil.

You're not getting hop utilization if you don't boil your hops, dry hopping adds flavor and aroma, but you're not isomerizing the alpha acids unless you boil them.

most of the time we add a very small amount of hops to the boil, when we used more then a small amount it becomes overly bitter, and we need to add honey to the boil to balance it out again. the batches we dry hop have more flavor. did we just throw in too much hops when the boil becomes bitter?
like i said we always wing it, and we know it's foolish, but we do it anyways.

The idea behind the hops is to sorta balance the sweetness of the unfermentable sugars and make the beer better, as well as creating a sort of hostile environment for bacteria and other nasties that'll make your beer taste gross. If you're having trouble with it being too bitter, you add more specialty grains, which contain unfermentable sugars. I know you've probably made some pretty good beer by winging it, but go pick up How To Brew by John Palmer and at least learn the basics of why this ingredient is added or that one.
Trust me, I'm the last guy to tell you to brew to style, brew with whatever you wanna throw in. But if you're willing to learn what each individual ingredient is doing to your beer, as well as keep decent records of what you're doing, you're gonna have better brew. Nobody says you have to follow a recipe, that's half the fun of making your own beer, but the other half (to me, at least) is understanding that beer.

would be a good hoppy to get into. never tried beer, but i definitaly no how to make wine.
would like to get into the beer brewing, just don't no exactly where to start. i guess i could google around a bit.

www.howtobrew.com has John Palmer's 1st edition to read for free. Or you could buy the 3rd edition that is out now.
