learn from my mistake - time to sterilise casing
    #1450272 - 04/11/03 03:26 PM (21 years, 2 months ago)

i posted this a while back, but retracted it when i realised my mistake: my casings contam, so i'm gonna start treating them with the pc treatment. boy, was my face red when i saw the answer to my q right there, in the faq page i was linking to!

should i sterilise my casing? i tried to do it in the microwave, but i dunno if i overpasteurised it or understerilised it or what.

i microwave my casing mix, and i tend to get a lot of contams that originate in the casing. i get plenty contams everywhere, but i'm new and i'll do better when i don't have to store my stuff in the spare room, on carpet. 3 cats share the house i live in. am i sterilising by mistake? i tend to nuke 5 mins, wait a minute, stir up, nuke 5 mins more.

i don't understand

this is what the faq has to say.
sterilised is better
i don't know
i think i know - pasteurised is better
i think i know - sterilised is what i recommend
what? i think i know, i know this-that wtf chill out

so - who here sterilises their casing layers?  and who puts the effort into a proper 170F/90min pasteurisation. just curious
