Some fruiting questions (first solo) (pic)

It's pretty damn humid where I live. My mycelium's looking good. I made the mistake of getting bottlenecked jars so I had to break the jars open with a hammer and pick some glass off the cakes (one of the cakes is completely broken into pieces).
There's only a few cakes in my terrarium cooler, it's been a over a week since I birthed and I have some questions.
1. I haven't had to spray water and the white fluff has still been growing on the cakes but no fruit, it's been a week since I birthed them, does humidity and temperature (i live in the south and keep my room pretty cold) affect the speed of growth that much?
2. I saw a few green and gray spots on my planted cakes after a week, should I be worried? (The reason I'm worried is because there's all this emphasis on sterilization before inoculation and now that I'm taking them out and touching them they might get contaminated).
3. One of the cakes is broken up in to bits, will the mushrooms still grow out of it?

TL;DR: I'm being impatient but I don't know if I should be worried.

not to be a dick, but i think you should read some more stuff...how to dunk and roll...how to make a PROPER shotgun fruiting chamber...misting and fanning...
i LOVE the busted up cake! made me laugh so hard! i have no idea how successful it will be, but im SURE it will need some recovery time.
i think at this point, contams are the least of your worries.

What do you mean by planted cakes?
Blue spots = bruises from to much touching or them being to dry
Green = prolly trich = throw it far far away, sterilize the area with lots of lysol
You need to soak your cakes in clean room temp-ish water for approx 18-24 hours, then roll them in vermiculite to create an even pinning environment and proper moisture content/retention.
I would take the broken up cake and make a small tray (maybe a small alluminum disposable serving dish) and pasteurize a 50/50 mixture of coir and verm, mix the pateurized substrate and that crumbled cake, and cover it with aluminum foil for about a week. then uncover and leave in your fruiting chamber.

The green isn't Usaly good. The grey might be cobwebs mold and can ne taken care if with a tine bit of h2o2 mixed in with some water sprayed on. Not sure thoe if it will have any effect on your fruits.
