Oyster Grow-Off (Blue, Golden, Grey, King, Pearl, Pheonix, Pink)
    #14499723 - 05/23/11 03:43 PM (12 years, 8 months ago)

I'm doing a side-by-side grow of all the Oyster cultures available from Ralphster's Spores, except for the rare and endangered Funcia di basilisc (Pleurotus nebrodensis).

Blue (Pleurotus columbinus)
Golden (Pleurotus citrinopileatus)
Grey (Pleurotus ostreatus)
King (Pleurotus eryngii)
Pearl (Pleurotus ostreatus)
Phoenix (Pleurotus pulmonarius)
Pink (Pleurotus djamor)

I received two packages form Ralph_Edibles. The first contained King, Pearl and Golden Oyster liquid culture syringes. The second had Blue, Phoenix and Grey Oyster on agar along with a Pink Oyster syringe. The first package was transfered to agar on 11.05.11, the second three days later on 14.05.11. I also cloned the biggest mushroom form my last grow, weighing in at over 8 oz. The rye jars were inoculated on 16.05.11 and 17.05.11.

Agar

18.05.11 -  The advantage of agar wedges over liquid culture is more apparent than differences between species. The Golden Oyster plates shows no signs of life.

23.05.11 -  All plates are ready to be transfered, except the Golden which still shows no growth.

Rye

18.05.11 - The agar wedges have started to recover and grow into the grain.

23.05.11 - A week in and the agar wedge jars show strong growth. The Pink Oyster LC is also doing very well. The Golden, King and Pearl LC's are slower but growing.

The plates will be used to make master slants along with more grain jars. Out of the grain jars that are colonizing right now, one of each species will be saved to be used as a master for g2g while the other five will be used to make straw logs.

Great work! This is going to be really interesting!

One thing though, if you clone a mushroom grown from an isolate, don't you just get the same isolated strain but further from it's origin?

Just your standard synthetic filter discs.

What are the temps like in your fc? I know the phoenix oysters are temperature tolerant, but some of the others might make super small fruits since it's almost summer.

My fruiting room is in my basement and totally climate controlled. I can dial the temperature and humidity to suit the species.I am also building another room in my garage that would be more suitable for the temperature tolerant varieties.

Running seven types of oyster will probably be a one time thing. I'm going to try them all out and pick maybe two or three that perform the best.

Do you plan on expanding each of the 7 to a variety to see if you get varied performance?

Actually, what's the aim? Aesthetic? Shelf life? taste? Yield? Speed to fruiting?  Or just noting each so later you can choose horses for courses?

Yes, all 7 will be expanded and fruited. I have enough room right now to do 16 logs at a time.

I'm currently selling my mushrooms to restaurants and markets. Next month I will be starting to sell at farmers' markets too. I've had a lot of customers ask for more variety, right now I'm only growing Pearl Oysters.

I'm looking for a mushroom that balances its attributes while remaining profitable. Eventually I would like to have a mushroom with high yield and good shelf life to make up the bulk of production with some more exotic varieties thrown in every once in a while to keep up interest.

To tell you the truth I never expected to be growing out 7 cultures at once. I was talking to Ralph_Edibles about trying out some different Oysters and this is what showed up. I think I'll manage though

Lookin good Grobo!  I have grown all seven of those but never at the same time.  Good luck and as I told you before the blue is my favorite for speed and yield,  King are second and Phy are looking like they will be my new favorite soon.  I have blocks of Phy that are fruiting outdoors and it is over 100f where I live.

My bad, i left the word substrate out of my previous post.

Will you be fruiting the seven to say 3 different substrate mixes, to see whether each strain performs differently not just under your conditions but with differing substrate to digest?

I really like your idea about variety to maintain interest too.  Small doses of 'new' strains can be sold at a higher premium price.  Just tell people they are more rare

Looking at your fruiting room...how do you keep the pladtic in place?  Just staple it to timber and not worry about the holes?  Running cables into the room for lighting and such...how do you do that?  Or lights are outside the plastic?

I'm really going to have to get under my decking, measure it all up and start to plan the grow room set up.  I was thinking panda film but considering lighting i probably want a clear plastic ceiling with lights above it.  Sorry, thinking out loud.

For substrate I'm starting off with the standard wheat straw to get a base line. I'm going to experiment with different ratios of straw, soy hulls, spent coffee grounds and chaff.

The walls in my room are concrete so the plastic is just attached to the ceiling and taped to the vinyl floor, it just hangs between the two. It works pretty good but it would be better if it was attached to the walls.

I find the best thing to secure panda plastic is drywall screws with plastic washers. I just cut up pop bottles or something similar to use as washers. Then I use some waterproof tape to seal it up. A little bit of waterproof tape seals up holes for cables and such, but it's probably not needed.

I used some poly tubing to make waterproof enclosures for my lights. Your idea for recessed lights and clear ceiling sounds better though.

Grain Colonization Speed:

Blue > Phoenix, Grey, Pink > Golden > King, Pearl

The Blue Oyster is the clear winner for colonization speed. It colonized the rye in 10 days at 70-75 °F (21-24 °C)

I've been busy expanding grain jars. My total now sits at 100.

Blue: 18
Golden: 12
Grey: 18
King: 18
Pearl: 4
Phoenix: 18
Pink: 12

Can I ask how long it took to sterilise all those jars? Thats pretty awesome. I've only been doing this for a year but still I feel like a beginner. My wife and I are buying a house with an unfinished basement. She gets her dance studio and I get my grow room! Then it is full on. I'm working on some kings right now, just sterilized 25 jars
of grain and it took all day. I will definitely be keeping my eye on this thread, Thanks!

Also if you have time, what might your opinion of using frp on the inside walls be. Do you think it would be overkill?

Good to know, I've always used YMA. The Golden Oyster is looking good on the rye. I only put one drop of LC on the plates so there might not have been enough viable material. The plates are still clean so I'm going place a rye berry on each and see it takes off.

Pentashroom,
I've got the jar routine pretty dialed in, it takes me around 2 hours to make 20 jars, I save 20 minutes by cooking at 20 psi. I would say 20-30 minutes working time and then a bit of time checking the pressure cookers every 5-10 minutes.

I've got two AA921's that hold 10 jars each. I can do two cycles a day if I want to and make 40 jars per day. I usually stick to making one batch a day, I'm more into the perpetual harvest idea rather than having huge bunches at once.

I soak the grain overnight (~12 hours) in a 5 gallon bucket. I use 25 cups of rye to make 20 jars for agar transfer, less grain for g2g. I boil the grain for 10 minutes in two stock pots. The grain is drained and placed into 4 plastic containers. The containers get shaken every few minutes until they stop steaming. I use a 1L dish and a canning funnel to fill the jars, much quicker than spooning it in.

I think using fibre-reinforced panels is a good idea. The only drawback would be cost, do you have a cheap source?

Still searching for a good deal on the frp. The local lumber yard wants $50 a sheet, Home depot is around $30. I figured I only need 8 sheets if I leave the concrete walls alone, 17 if I cover. I'm lookin at $100-$200 for the walls. Then I have lighting and FAE and humidity, all which in time I would like to have fully automated. I think to start I will do some temp 6mil plastic till I can put all this together.

Having 2 PCs is the way to go, I have 1 right now. But will definitely be upgrading when I get the chance. I boil grains for 20 min let the steam out by spreading them out on a clean towel or two. then just hand fill the jars and PC @ 15lbs for 90min. I can fit 9 jars in my PC, 2 lay on top.

Man like I said I feel like a beginner, but I think it is the lack of space is keeping me from expanding. I'll definitely be posting more when I get my operation going.

Thanks for your input.

All 7 types are now on straw. Each 3 foot x 10" log was inoculated with 6 quarts of rye.

Four days in and the Blue Oyster is kicking serious ass. The Phoenix is second followed by Grey.

Although though the King, Pink and Golden were inoculated just one day after the first batch they are much further behind in growth.

I have grown the Pearl Oyster before and wasn't super impressed with its performance. I made up a small log with 3 quarts of rye to compare to my previous grow. As you can see, 4 days in and not much growth.

The jars are looking good. Hopefully I'll have another 10 logs made this week.

Jar Count: 140 and climbing

Best of luck on all these, GroboClone.  I'm growing golden right now - my first grow ever.  So, I'm routing for your Goldens to turn out spectacular, even though they like to hang back in last place for most of the race.

I'm also cheering on your kings--I ordered king and lions mane spores from Ralphsters last week.

After only 9 days the Blue Oyster has colonized the log. If it fruits well I think I'll have a keeper.

The Phoenix is in a 3 way tie for 2nd with King and Pink.

Grey has fallen back and brings up the rear with Golden.

I didn't take a picture of the Pearl but it is somewhere between the Phoenix and Grey.

I made 9 logs this week bringing the total to 15. The goal next week is to clean up the fruiting room and overhaul the air handling system to prepare for the new logs.

Beautiful, GroboClone! Wondering how you managed to prepare all those grain jars. Do you use a few PCs at once?

So the Pink Oyster had enough of sitting around and decided it was time to fruit. Looks like I'll have to get the Fruiting room sorted ASAP.

To answer your question Terry, I don't have any difficulty making enough jars. I've got two AA921's and can make 20 jars a day. My pasteurizer can hold enough straw for 3 logs a day. If I use 6 jars to inoculate each log, one batch of jars is enough for one batch of straw with 2 jars left over for g2g masters for the next batch.

Interesting that 6 jars are enough for each log. I was planning similar sized oyster logs, but using many more jars per log (a 30% spawn ratio). Your spawn ratio is 12%, and that's what I'm going to use now instead of my original plan. I just did G2G for this, and now I'll be able to generate twice as many logs!

Before the blue huh... 11 days? nice!

I <3 the salmon color... the mature pinks remind me of phalonopsis orchids.  Chefs can cheat that pink color into sticking around with a pinch of beet powder.

How much dry straw are you loading b4 soak?

When you get some fruit off these guys would you mind posting a tasters choice comparison type dealy? I am growing blue oysters. Not at fruiting yet, but I was wondering how the different varieties compare.

Myxomycota,
I've only tried the Pearl Oyster, so I'm pretty interested to see how the others taste myself. Maybe I'll set up a tasting booth at the farmers market and see what's most popular. Once things start moving I can judge by customer feedback and sales.

The Phoenix has started to pin in the incubation room. It along with the Pink and Blue have been moved to the fruiting room.

Sounds good. The speed of colonization has been great with 6 jars.

It's been around 65% RH outside so I would think the incubation room should be close to that.

I load 2/3 of a small square bale per batch, I'd say around 30 lbs.

Probably just strain specific.  I have a few different cultures of p. columbinus and they all tend to grow really thick.  Thicker than my ostreatus or others.

Yep, just a characteristic of P. columbinus. Although it has shown strong mycelial growth it has yet to produce any pins.

Here's 2 days worth of growth with some closeups of the same clusters as before.

I picked this cluster today. The gills on the top mushrooms were starting to turn up. It weighed in at 1/4 lb and is about the size of my fist.

To anyone who has grown Pleurotus djamor before, am I on the right track picking them at this point or will they get bigger without over maturing?

Those pinks are nice, though they seem a bit small. You may leave them for another day or two, but you have to watch them carefully, while they continue to grow. As soon as the margin becomes flat, they usually lose color, develop a fishy smell and start rotting at the sides, where the cap meets the stem. Picking them too early is the lesser evil.

Good work Grobo!
The pinks look nice,  they are on the small side but I have never had a pink(d'jamor) that got huge.  The only thing you can do to get them bigger is cool the temperature and increase FAE&RH,  but that would be tricky growing all the different Oysters at the same time.  I am working on isolating a warmer weather Pink Oyster flabellatus/salmoneo which should grow larger than the djamor with temps over 60f.

The Blues have always needed higher humidity and tons of fresh air to fruit,  which again may be hard with your set up.  I would recommend opening the holes slightly more and giving them a nice misting daily.  If you get the Blues dialed in you will be happy.

The Kings,  Phy and Pearl are the easiest to grow together as they all fruit well in the same conditions.

Very nice work and a good aim.

I can give a couple of predictions having grown and sold most of these;

Everyone will LOVE the kings

Most will love the blues

Quite a lot will say they don't like the pinks, it's a texture combined with taste thing.

I picked some Pink and Phoenix today and took them to a local market. Around 4 clusters of Phoenix and 8 of Pink with a total weight of 4 lbs.

The produce manager was glad to see me. She said that after they sold out of my last batch they tried to go back to the imported mushroom they had been getting before but their customers wouldn't buy them. She won't be ordering any more imports so now I'm their exclusive mushroom supplier.

Even though it was just a few pounds it felt good to walk out with some money in my pocket after a month of working with nothing to show.

I have given it some. Right now I'm good with 20 jars per day. I could also do without the added expense and waste of plastic. If I want to step up production I may switch to bags rather than buying more pressure cookers.

How much grain do you put in each bag? Have you had any problems with bags stalling out or going anaerobic in the center?

Ralph_E,

Just the info I was looking for.

I've upgraded my air intake to a HEPA filter and 400 CFM fan with a speed controller so I can get any amount of fresh air needed.

Humidity isn't doing as good. The disks on my ultrasonic mister keep wearing out so humidity was around 60%. I've gone back to a humidifier setup and humidity is up to 80%. Once the replacement parts arrive for my mister I'll be able to get up to saturation humidity again.

I've decided that using air-conditioning to regulate temperature isn't something I'm willing to do so temperature control is out of my hands. So far temperatures haven't been above 66°F (19°C) in the room.

For the rest of the summer I'll have to concentrate production on the more heat tolerant varieties.

Good call on the Blues, the mycelium grew in so thick that it was  sticking to the plastic and barely letting any fresh air in. Hopefully with misting, increased air and humidity they'll start producing soon.

What temperature do you find the Blues perform best in?

Kind of a random thought. I am currently taking an upper division genetics class, and we spent a bit of time on recessivity and dominance on phenotypes that are coded for by multiple genes.
So what I am wondering about has to do with the amount of varience observed in the Oyster mushrooms and whether these mutant phenotypes are a function of a single gene mutation or multiple genes coding for proteins in some kind of synthesis reaction.

This is a drawing I made for a problem having to do with flower color, but the principle is same.
You have some precursor, which gene 1 modifies into precursor 2, which gene 2 modifies into the final product.
So a mutation in either gene changes the final phenotype.
Do you know if any one has done any testing to figure out which phenotypes are recessive towards the others in Oysters, and subsequently, is non-wildtype color a single gene mutation, i.e. many alleles coding for the same gene, or the result of many mutations in a synthetic pathway?

Things are getting back on track around here. I got some replacement parts for my foggers. Now I'm running two foggers in my bucket. It's keeping the room at about 85% RH with around 150 CFM of air turnover.

Looks like the added humidity and fresh air payed off as the Blues have started to fruit.

The second batch of Pink and Phoenix logs have started to fruit. Again the Pink pinned 10 days after inoculation with the Phoenix a few days after.

None of the other oysters pinned in the incubation room but have colonized nicely. I now have at least one of each type in the fruiting room. They range from 2-3 weeks from inoculation.

Very good growing!

Did i get the steps right?
Hmm, when one fills up the bag with straw and Grain Spawn, and packs it tight, it is then taken to the growing room. Then, holes are punctured in the bags and the tempt, humidity, etc are all kept accordingly.

Or does one only puncture the bag after a full colonization?

I think you need to put holes in the bag as soon as you fill with straw and spawn.  The straw needs to breath or it will go anaerobic and rot.

Right now I have the room setup for 16 logs. The only hard limit would be giving the logs enough room so the mushrooms don't bump into the walls/each other as they grow. Also remember the more logs you put in the faster the CO2 will build up, requiring more airflow. You also need enough room to move around so you can actually pick the mushrooms.

The holes need to be made soon after the bag is filled. I'm coming to the conclusion that more holes are better. The last grow I did I made some breather holes first and then made more holes to fruit from when introduced to fruiting conditions. The result was mushrooms popping up all over under the plastic requiring me to cut them free. This time I made all holes while still in the incubation room and they seem to be responding. This may be a characteristic of the new varieties but all the mushroom are growing out of the holes I made.

Steps are as follows:

1. Pack straw and spawn into log
2. Let log sit to equalize moisture (2 hours will do)
3. Puncture holes in plastic (I'm using a hunting arrow with 3 blades and around 50 holes per bag)
4. Let log colonize at room temperature (once it gets to 100% give it some extra time to consolidate)
5. Introduce log to fruiting conditions
6. ???
7. Profit

Haven't bothered with calculating BE. I got 3 lbs form the Pink and 6 lbs from the Phoenix on the first flush. Not great but it's a start.

Neither has started a second flush yet, brand new logs of each have started to fruit.

Well it looks like I still don't have conditions quite right for the Blues. They are long stemmed and small. Hopefully I can borrow a CO2 meter this week and try to work on it but most likely I'll have to hold off growing any more Blues until the temperature drops.

The good news is the Phoenix log started its second flush. 7 days from first flush being picked to pinning of the second.

I still have to see how the other logs fare but it looks like Phoenix will be my go-to guy for these hot summer months.

If you put more logs into your room, yes faster co2 build up but you also have to move less air, badically because you have less in there.  Your logs are so big that they fill several cubic metres of space, leaving less room for air.

I should read back and see if you are running a fan non stop or not.

Yep, fans are running non-stop. They are on speed controllers and rated for 400 CFM with no static pressure.

I agree with you that the logs take up space, around 1.5 ft³ each. The room is 324 ft³. 16 logs take up 24 ft³ or 7.5% of the room but produce 1600% the CO2 of one. I can't see how that wouldn't require more air.

I have made arrangements to borrow a CO2 meter later this week so I can check my levels.

Maybe scale is lost a little bit somewhere in your pics as those logs look bigger than you are suggesting.  And sorry but the following is metric, it's the way of the future! (since 1966). :p

So your bags look about 8 inch diameter, so an 8.8cm radius.  Square that and multiply by pi and we're up in the 250s odd.  Then i guessed your logs are at least 2 foot (60cm) long so all up they are about .15m^3.

Yes, just my guesstimate.  I'll go back now to check out your log dimensions.

Edit: 10inch diameter x 3 foot = .34 metres...hmmm, maybe i need to shift that decimal point again.  Alright, i'll pipe down now after proving i don't know what i'm talking about.

The long-stemmed and small cap blues are from high temperatures (not CO2).  I'm experiencing the same thing.  I have to bring them into my basement (which is at a constant 65F), and then once they pin and are almost dropping spores, then I put them in my window wells to fully grow out.  It's a pain, but I only have to do this during the summer.  I have to bring the kings in as well- much easier to grow mushrooms when it's COLD!

If you don't mind me asking, what did you make off your first flush Whole sale and retail prices please. How many lumen's you running in your fruiting room? May have something to do with fruit size. Nicee grow and good luck.

Thank you for the steps.

When holes are punched and it is colonizing, does one still have to maintain the humidity around 95-100% in the surrounding room or the moisture inside the bag is good enough for the humidity?

And if so, that means spraying water directly on the holes?

I still haven't picked up the CO2 meter. I've been out of town for a few days. On the way back I pick up 700 lbs. of rye. I'll have to pick up some more straw next, I'm down to my last 3 bales.

bik123,
I've never artificially increased the humidity while the logs were colonizing, the moisture in the bag has always been enough.

I figured it might be temperature related. I've stopped making new Blue Oyster spawn until I can get this sorted out.

My highest room temperature has been 20°C (68°F). Yours have been responding well to a temperature of 65°F ?

I'm selling them for $12/lb wholesale and $16/lb retail.

The room gets 12000 Lumens for 12 hours a day.

Grobo, i would hope that the issues with the blue oysters wouldnt be temperature related due to the fact that on ralphsters site it says fruiting temps60-70F and you were within this range:  http://www.ralphstersspores.com/USA/product_info.php?cPath=10&products_id=255

I just got a blue syringe here, ill let ya know when i get the results cause my temps are the same as yours.

Fungi Perfecti will not ship their blue oyster "Patch" (grow bag) during the warmer months, as they will their pearl oyster and other Patches. They say that blue oysters require temperatures of approximately 65 degrees F. to fruit.

The Blues just need more FAE and a higher RH,  I have never had the temps to high but with the higher temperatures you need to keep RH around 90%.  For your set up Grobo I would stick with the PHY, Pearl and Kings and you won't have to change a thing to get great results.  If you want to get the Blues going I think it is mainly a humidity problem,  the myc grows so thick with them it locks the water in the logs so when it is time to fruit they need moister from outside the bag.

Great job tackling all those strains at once,  I would say your grows are very successful even with the Blues not performing for you.

Can anyone tell me if the air, that is inside the incubation room was filtered, or normal air would do, once the bag is punched with holes?

I am following Ralph_E's advice and am only making new spawn of Phoenix, Pearl and King.

Temperatures have been acceptable, even with highs of 35°C (95°F) outside the room has been holding at a high of 20°C (68°F).

Blue

It's a shame I can't seem to give these guys what they want. They produce awesome pinsets and grow fast.

Same clusters, two days apart.

Golden

The grow has had its first casualties, the Golden Oyster log I put in the fruiting room 8 days ago has developed green mold. The other Golden Oyster log in the incubation room doesn't look so good either. Both have been tossed.

Grey

Much like the Blues these require more FAE than I can get right now. They have only produce a few mushrooms in small clusters.

King

The speed of colonization has picked up. G2G jars are colonizing in under a week.

The Kings look just like the Pearl I have grown previously. They are growing nice and slow and should produce some large meaty mushrooms.

The pictures of the log were taken two days apart.

Pearl

I've yet to fruit a Pearl log this grow but it has given some nice fruits in the past.

Phoenix

Nice clusters and lots of them. I picked around half the mushrooms from this 1st flush and let the small ones grow a bit more. I was late picking the second half of the flush so these are overmature.

Pink

Performs well in my conditions. Very light and delicate mushrooms. Has a strange taste and doesn't store well.

That's a really great summary Grobo.  Nice and simple break down and gives a great perspective to the newb grower as to why their grow might not be going too well.  It could be species or it could be fruitin condition fussiness.  Thank you very much for sharing the pics and results.

WOW Thats a good price. Wonder what the states price wound be? Don't think I could get that here. I'm thinking $10 retail. Anyone on here selling oyster in the states. Trying to see if it would be worth it?

Those look awesome! So the pinks don't keep as long, that's good to know. The Phoenix sp. seems to be doing the best. How many logs do you make a day and what is your daily/weekly yields from that amount of logs? Good work man keep it up!

How does one spray water in the holes,to the mushroom directly when it is growing?

Once the 1st flush is harvested, does the 2nd flush comes out just like that? Or a rest period is required?

Haven't updated in a while so I figured I'd share some recent progress.

I've switched production to solely making Pearl Phoenix and King Oyster. I still have some Blue logs coming down the pipe and in the fruiting room.

I've stopped trying to increase airflow and instead have concentrated on achieving 100% RH. Temperatures are still staying in the 18-20°C range. If I get the opportunity I will try installing a portable AC in my air handling room to try to get the room temp down to ~16°C.

My 6.5 gallon bucket with 2 ultrasonic misters is barely cutting it. I am only able to get 100%RH with the fans on close to there lowest setting. Even so I'm going through around 6 gallons of water a day. If I was to start over I'd invest in a commercial unit right of the bat, the money spent on humidifiers, fans, misters etc. would cover quite a chunk of the cost of a proper unit.

I really don't want to pick up more misters to augment the humidity at higher airflows so I've started to shop around for a commercial humidification solution. Any suggestions?

The Blues are still making long stems but the cap size has gotten larger. Pinsets are coming in strong but require larger holes cut in the bags once in the fruiting room, a very time consuming process. A large number of mushrooms abort before reaching maturity. 100%RH seems too high for the blues, mycelium is growing on the caps and stems.

The Kings perform well, they don't need as much work as the blues but mushrooms growing under the plastic must be cut free. Size of mushrooms is good but overall flush size is small. Kings need more supplementation on straw than other Oysters so I'm going to start experimenting to find the right amount.

The Phoenix fruit perfectly from the bag and clusters develop at almost every hole. The logs become covered with thousands of pins under the plastic. Here is a nice even second flush. The mushrooms are a little small and stems are a bit longer than I would like but not bad overall.

I've worked my way through my first 12 bales of straw and will be switching to an alternative substrate.

Excellent update, GroboClone.  Do you have a stall at your farmer's market to sell all those mushrooms?  I found I wasn't ready and I was overwhelmed by the amount of fruit from just two straw logs.  That much fruit must be keeping you very busy -- do you have fridge space?  I like your kings- it'll be a couple weeks before I hang some king straw logs, but I think they'll sell really well because they taste so good, and due to the number of Italian restaurants near me.  I plan on supplementing with alfalfa based on Buckeye Oyster's impressive grows.  Btw, regarding humidity, my grow room is 8'x12' and a five mister ultrasonic (on a cycle timer), aquarium bubbler, and small squirrel cage blower (running non-stop) on a 30 gallon rubbermaid works extremely well--I can't imagine a better humidifier, it does so well (Thank you, Agar, wherever you are).  -- Why are you abandoning straw as a substrate?

Seems to be going pretty well for you, GroboClone!

With the kings, you are on the right track, they want a substrate with more nitrogen. You can find a few good links here:
http://www.shroomery.org/forums/showflat.php/Number/11904453#11904453
Additionally, you may want to look into using 15% alfalfa combined with straw, like NQS suggested, but be aware the logs will heat up during colonization.

Regarding humidity, I would not recommend 100%RH. A lot of water is created as side product when the mycelium breaks down carbohydrates, cellulose and lignin, so the water content of your covered substrates will rise more and more, reducing second and third flush, plus during fruiting the mushrooms need to evaporate lots of water. With maximum humidity, your harvest will be almost waterlogged, heavier but with a reduced shelf life.

Carsten

Haven't gotten around to setting up a farmers market stall yet. The best market around here has a 3 year waiting list. I could probably jump the queue since no one else is selling mushroom there.

I could also set up at a smaller market but I figure I can make better use of my time growing mushrooms than sitting around at a farmers market selling them, especially since I'm getting a very good price for them at the wholesale level.

I'm able to get rid of product pretty fast. When I was doing my trial runs I was giving out a lot of samples out and developing a relationship with many different stores and restaurants. As I up my weekly production all I have to do is call a store that was interested and get them on my weekly delivery schedule. My biggest concern is having a consistent supply so I can fulfill my weekly orders. Any excess is sold to friends and family.

I have a 12 cuft deep freeze that I converted to a fridge to store mushrooms. Works great, the humidity stays nice an high inside, and it's dirt cheap to run.

I find ultrasonic buckets are great when they are new. I've had bad luck with disks wearing out very fast, algae growing in the bucket, scum collecting on the disk and reducing the output. Each disk needs to be cleaned daily and the bucket needs to be cleaned 1-2 times per week.

I'm switching from straw because there isn't much around right now. What I can find is $4 per bail and a 3-4 hour round trip. Once this years harvest starts coming off I'll be able to find pre-chopped and bailed straw for >$2.

The plan is to get some soy hulls from a local feed supplier and go from there. Since I'm focusing on Kings I'm also experimenting with different levels of bran supplementation with bottle culture.

Wow Grobo!  Such fantastic grows and such fantastic yields.  Those phoenix look like something from a cultivators handbook, perfect looking bags!

Thanks for sharing all your grows and experience.  I'm curious, how much growing had you done before you leapt into this borderline commercial scale grow?  And is this your full time job now?

Thanks NSF,

I'm really happy with how the logs are looking, yields should go up as I adjust conditions to exactly what each variety requires.

Yup, this is my full time gig. I've been growing on and off for around 5 years now. I'd just do a couple of crops a year. Started with PF cakes and spore syringes. Made my own prints and moved on to millet, then rye. Built a glove box and started isolating strains on agar. Tried my hand with coir monotubs and trays. Finally I was making straw logs.

I looked back one day and realized this is what I wanted to be doing full time, so I made it happen. I finished paying off my house, saved up a bit of startup cash and quit my job.

Very inspiring stuff mate.

Seeing as you have no trouble moving your product do you love hearing how much customers prefer your shrooms to ones they've had previously?

Also, maybe i missed it but how many kilos do you sell a week?

10'x10' clean room for colonization, shared with flow hood and prep table. Right now I have 3 shelves that fit 10 logs each. Fruiting room is 6'x9'.

The Phoenix Oyster is ripping it up. I let this log colonize until it was pinning (it only took 15 days) then introduced it to fruiting conditions. This strain pins everywhere, thousands of pins. I would love to see how it performs without the bag. You can also see how much stronger the growth is on the bottom of the log where the water has collected.
