Looking for Trout Recipes

I mean, I assume you're asking here because you'd like to do something a little special, so do you have any skillets without coatings?
A pan roast would be a good use of trout too.

On the grill with salt, pepper, and some lemon. That's pretty much my favorite way. That or baked in foil with salt, pepper, lemon and butter stuffed inside.

You should try cooking some up en papillote I did some tuna steaks baked like that the other night and it was deelicious slice up some lemons and make like a bed of lemon then set the fish on top and rub the top with the some zest. so so good

Blackened fish.
Ingredients 1 tablespoon paprika 2 teaspoons dry mustard 1 teaspoon cayenne pepper 1 teaspoon ground cumin 1 teaspoon black pepper 1 teaspoon white pepper 1 teaspoon dried thyme 1 teaspoon salt 3/4 cup unsalted butter, melted 6 (4 ounce) fillets trout 1/4 cup unsalted butter, melted
Directions 1. In a small bowl, mix together paprika, dry mustard, cayenne pepper, cumin, black pepper, white pepper, thyme and salt; set aside. Heat a heavy cast iron pan on high heat until extremely hot, about 10 minutes. 2. Pour 3/4 cup melted butter into a shallow dish. Dip each fillet into butter, turning once to coat both sides. Sprinkle both sides of fillets with spice mixture, and gently pat mixture onto fish. 3. Place fillets into hot pan without crowding. Carefully pour about 1 teaspoon melted butter over each fillet. Cook until fish has a charred appearance, about 2 minutes. Turn fillets, spoon 1 teaspoon melted butter over each, and cook until charred. Repeat with remaining fish.

I like to pan fry trout. Flour then dip in buttermilk,then roll in a mixture of half bread crumb and half ground almonds. Season as you like, I like tarragon and basil, some garlic powder,and salt and pepper . Fry in about an inch and a half of hot oil for about 5 minutes per side or until golden brown. Serve with lemon

You might think this sounds wrong but my favorite way to cook trout is slathered in BBQ sauce and wrapped in tinfoil; a good campfire friendly method.
I used to do the herbs and spices thing and batter it etc, and i still love a good tempura trout, but then one day i met this awesome redneck who put just BBQ sauce on it and i've been hooked since.
I've fished trout for 25 years and I've tried it all kinds of ways. Smoking them is really good and broiled in foil with BBQ sauce are my favorite eating methods.

after gutting put a bit piece of butter in the slit on its stomach, wrap in tinfoil and either bake or put on the grill for 16 mins, thats how i do it when im in the woods

We used to do this recipe at a restaurant I used to work at.
Basically broil the trout with some of this mixture in it:
small diced up brie bay shrimp dill and a lil bit of mayo to bind it

if you can fillet the trout(it takes great care and steady hands) they are really good pan fried.
mix up a couple of eggs and a cup of butter milk, dredge the trout fillet through this then batter it in bread crumbs and fry it in butter....
If you can remove any dark meat from your trout itll help out a lot.
If you're cooking them out in the sticks on a fire, gut, scale, decapitate and remove fins(butterfly) put some butter, garlic(or whatever kind of seasoning u like) and lemmon in a piece of foil with ur trout, wrap it up and cook it over coals for five minutes on each side... Doesnt hurt to throw some potatos, onions or corn on the fire a bit prior to the fish.

Old recipe I learned in Arkansas:
Gut the fish; put on piece of cedar and grill; throw away fish eat the cedar
In Idaho tho, it's pretty common to gut them out (clean the black shit off the spine) put some sliced lemon in them and bake them, butter is optional.

Idaho... I'd kill to get to go hunt out there, last time I was in Idaho I saw some wolves, first time I'd ever seen a wild wolf in my life. You guy's trout are a bit more pink(the meat) than ours, much better to eat. That white meats a sign of captive raised fish, that havent eaten a diet of crayfish, sculpin and mayflies, but rather those brown fish food pellets....gag... I'll go for the pink meat any day...

Shit if you ever end up out here let me know! We've also got Henry's fork which is a blue ribbon world class trout river. We've got some hatchery fish, but yeah the ones that have been wild for a couple years look and taste more like salmon (meat wise). Wolves are gonna be open season soon hopefully, they're encroaching on Boise and have killed lots of livestock. Damn Feds are ruling it as endangered still, and somehow we have to abide by it even tho it only affects us (and Wyoming and Montana).
