Scalloped Potatoes

Ingredients:
- ~2.5 lbs or ~8 cups of thinly sliced potatoes (any kind will work, I used russet) - 2 cups shredded cheese (use any kind that you like, I used a mix of about 1 part colby and 3 parts monterey jack) - ~1 cup chopped yellow onion - 2 cloves of garlic - ~1/4 cup freshly chopped basil - 1 cup whipping cream - 1 1/2 cups milk - 1/4 cup flour - 1/4 cup butter - 1/2 tspn. salt - 1/2 tspn. pepper (freshly ground for best taste)
Instructions:
- Preheat oven to 350'F - Wash the potatoes, peel if desired, and thinly slice them approximately 1/8" or less. - Chop onions to desired size, and do the same with the basil. Mince both garlic cloves. - In a small/medium saucepan, melt butter and mix in onion and garlic. Cook until tender. Add the flour, salt, pepper, whipped cream, and milk all at once. Over low heat, whisk constantly until a nice creamy texture is accomplished. Finally add basil and mix will. Remove from heat and set aside. - In a 3qt baking dish, use half the potatoes and make a thin layer in the bottom of the dish. Sprinkle half of the shredded cheese over the potatoes. Take your cream sauce and evenly pour half of it over the cheese and potatoes. With the remainder of the potatoes, make another layer on top of the first, sprinkle the rest of the cheese over top, and pour the rest of the sauce evenly over all of that. - Cover with foil or oven safe lid. - Bake at 350'F for 45 minutes. - Remove foil and stir everything up real well. - Bake uncovered for an additional 40-50 minutes, or until potatoes are golden brown and the desired tenderness is achieved. - Let sit for 10 minutes before serving.
This recipe is my own spinoff of two different dishes in Better Homes and Gardens New Cook Book 15th edition.

man a ounce of dank in the cheese sauce would work wonders too.

Thanks guys. 
After all was said and done, I would have changed it up a little. I would have at least partially peeled the potatoes for a softer texture, and added at least another cup of cheese. But I REALLY like cheese, so what the recipe calls for might be perfect for a lot of people.

I was actually thinking the same thing last night when I made it. But I only have enough for a smoking stash at the moment.
