How long of a season does N. Rustica need to make seeds?

I've got some 1" tall N. rustica that i'm going to set out in the garden in the next couple days. That leaves me 110-120 frost free days. Should that be enough to get a seed crop out of these plants?

for sure. mine usually have browning pods by month 3 after sowing.

Less than 3 months in my experience. You can also keep them in pots over the winter. Mine reseed them selves and come up in crack in the sidewalk.
N. Tobaccum can also produce seed pods in 120 days.

Are Rustica quite hardy then, i'm in the UK and have been keeping mine in a greenhouse & in my kitchen, but i am running out of space for them, they are growing so quick.

They can grow to freezing temps for extended periods, as long as they do not freeze. They are not frost tolerant, but the seeds can overwinter.
