Mango wine and kombucha

Turns out that mango juice is a great thing to use to make wine and kambucha.

Here are some pictures of my current setup:




The mango juice is from Costco, $5.50 per gallon. 

The wine is done by pouring out a glass of mango juice, adding some sugar (maybe 3/4 cup), adding some yeast (ec-1118 or other) and letting it sit for a week to a month with the cap sitting on top but not screwed on.

The kambucha is done the same way except adding a kambucha mother instead of yeast.  One of my kambucha jars I seal so it self carbonates.  I burp it every couple days so it doesn't explode.

Initial results are excellent.

i love mangos, does the juice taste good like a good ripe mango? im about to try this. were do you buy your yeast?

I did two batches of kombucha, one in a gallon wide mouth jar with a paper towel over the top, and the other in the container that the juice came in with the cap not screwed on.  The one that was exposed to the air made a lot of vinegar and the one that did not get air did not have vinegar but instead had alcohol.  Mixing the two batches gave a great result.  Next time I will ferment 4 days with air and 4 days without.

Some people really like the wine but most people aren't all that crazy about it.  Everyone likes the kombucha.

When it is done fermenting I put it in the fridge to stop the yeast.

Where do you buy your yeast? I've been meaning to buy a lot of juice somewhere and ferment shit. I just haven't bothered looking for it.

Most home-brew and wine-making shops carry a variety of yeast.

Liquid yeast is best for the serious brewer, but dried yeast is a much cheaper and more than acceptable alternative.

Usually an 11 gram packet of wine yeast costs me $2, and will ferment 20 Litres(5 gals) of must.
