Wheat vs rye grain spawn.

I am a newbie at this so please bear with me.
I have caned food for years have 2 23 Q PC and experience using them. I have never grown mushrooms except from a colonized straw bag that I bought off the internet.
I would like to grow Oysters. I would like to practice growing with scalability in mind, that is if I ever went completely nuts and tried to grow in some volume. I would already be used to that method.
So with that in mind I realize that rye is the preferred grain. But where I live (Central California) its just not available. I could probably get some on the internet but with wheat I can get an almost unlimited amount in less than 1/2 an hour at a max price of $14 a 50lb bag.
So on a small (Very small scale operation would the performance difference be worth the supply/cost problem of rye?

different cultivators use different grains with success
i have never tried rye, some say its the best but have tested wheat, oats wild bird seed wild bird seed works great for me and is cheap and everywhere

I use wheat berries (grain).. and they work great! I don't even simmer... just soak for 20-24hrs.

That is what I do.
I have used wheat, WBS, and corn. They all work well, but the large corn kernels offer less nucleation points per jar when spawning.
