Hey everyone,
I was wondering you commercial producers refrigerate your produce? I've been shopping around and having trouble finding anything smaller than a walk-in with humidity control. Are there any ways to tweak a normal fridge into a higher humidity for mushroom storage?

Look into converting a chest freezer into a fridge. I used a 12 cubic foot freezer and it's working out good for me. The humidity stays nice and high (condensation builds on the walls). The best part is it costs less than $0.25 a week in electricity to run.

I would use either a Ranco ETC111000 or Johnson Controls A419 digital thermostat. You can get them pre-wired or wire them up yourself.

This is news to me? Even storing mushrooms after being picked needs high humidity? What percentage is optimal?

Storing mushrooms after picking requires nitrogen gas.  Although that's far too advanced for hobbyists.
