Shiitake Grain Smells of Ammonia?

I have some WBS jars that have been colonized for a month or so and assumed they would be okay since Shiitake is slow to develop. I decided to spawn them to sawdust pellets and when I opened the jars they smelled like ammonia. They did have a little liquid that looked like metabolites in the bottom of the jars but I have seen that with other species and had no problems. Any ideas as to why these smell this way and if it is a contaminate. I have not grown Shiitake before so I'm not sure.

Well I did a general search first and didnt find anything and just now I went to the contam forum and searched and it looks like bac. contam so out they go. I have another doz to check now I hope they are not all bad!!! All my oysters are good so we will see.

Shiitake has a distinct aroma. If you've never smelled it before, it can be confusing. Once you smell a healthy, freshly shaken shiitake jar of grains, you'll never forget it. RR

This was definitely an ammonia like smell. Some of the other jars were fine and they had a very different smell. Looks like I just lost a few. I used 70lb dry of hardwood pellets pasteurized and 24qt spawn today so lets hope I have lots of fruits over the next few months. H. Ulmnaris, pearl oyster, yellow oyster, and shiitake. All in plastic pails about 2 gallon I guess. We shall see.

Well I just washed all the jars and it was 32 qts including the 3 bad jars.
Toni I have another 11 jars of the shiitake culture that I got from you, and I used some this time as well so hopefully I will have some fruit to show you soon. I did mostly the H. ulmnaris as I think it will be best for the season and my current situation. I am just trying to get a system going for a consistent rotation of spawn, fruit and seasonal conditions. For me it is going to be easier to heat in the winter than cool in the summer. I'm going to do some agar tonight and get some cultures transferred and isolated. My wife is out of town so once my son goes to bed it is play time. When they are clean and growing well you will be first in line.
