Bacterial infection but still growing

My pet turtle had a couple of jars of popcorn that were ready to spawn into straw. The jars fully colonized in about a week and a half and my turtle shook them. They recolonized about 3 days later.
When he opened the jars to mix them with the straw, there was a sour apple smell coming from the jars (very strong); however, there was no sign of contamination, and there wasn't even any "wet spotting" The mycelium was beautiful and rizomorphic. So he spawned them anyway knowing that he had a massive bacterial infection.
The grain is colonizing the straw rizomorphically and quickly (just like always). And the straw bed (about a square foot and six inches deep) just smells like normal wet straw. There is no sour bacterial smell of any kind.
If the straw continues to colonize normally and it smells mushroomy and not sour appley in a week or so, then does my turtle have anything to worry about when he eats these things? The infection never seemed to affect growth and it appears to have gone away.
My turtle appreciates your reply.

Are you sure the smell wasn't Co2 built up ? Anyway, i would continue in your situation but i would keep an eye on it, let it fully colonize and see if it hasn't any sour smell. Also, if it gets to fruit and you see the pins or fruitbodies are too skinny or have any malformation, throw the thing away.

my pet spider had the same problem with a bunch of jars. he threw them all out. even if they are good, there is no point in taking a chance, you know? better safe than sorry. that's just my spider's opinion.

as a rule, those are good words to live by.
but this one dude I know (TODIK) has had a couple jars that fought back and won the wetspot battle simply by taking them out of the incubator and letting them colonize in cooler temps.
in cooler temperatures, the bacteria tend to reproduce drastically slower than in warmer environs while the mycellium will keep chugging along at a fairly steady pace.
Bacteria can be beat.
