I went way overboard. But, I had to use up the supplies I had. I put together a monotub. Layered, bottom up: CC/verm, 2qts spawn, composted Hpoo, straw, CC/verm... I have great growth. The myc' has "roots" all over the top layer. --- Should I put a new layer of maybe peat/verm+ over top?

Do you mean the top layer has fully colonized? Pics would help.
Wait several days after full colonization for consolidation to introduce into fruiting conditions.
I let mine go till a see a few pins, then introduce into fruiting conditions.

making a decision about adding more substrate should probably be based on how deep it is now.
i suggest just following todlow's suggestion. no need to mess with it if you are getting solid growth. you could get some nice fruits, or you could mess it up if you play around too much

I think OP means a casing layer, now that I read it again.
Cubes don't need a casing layer, but you can put one on once the tub is fully colonized & ready for fruiting conditions, if you want. Personally, I don't...
